Mango Tango (No added sugar)
Making smoothies is a lot of fun because you can use your imagination coming up with the right combination. I love this smoothie because it tastes great, and you need no added sugar. That is a nice bonus.
Ingredients
1 C Water
1 C Ice
1 C frozen Mangoes
1 frozen banana
2 tsp chia *optional
Directions Servings 1
1. Pour all the ingredients into the blender. Pulse and blend until smooth. Serve

Start your Day Healthy Smoothie
This smoothie is loaded with fruit and spinach. It is a great way to start on your day healthy. I love having smoothies for breakfast.
Ingredients
1 C cashew milk or milk of your choosing
1/2 C cold water
1 to 1/2 C fresh spinach
1/2 C frozen mangoes
1 C mixed berries
1 frozen banana
1 orange peeled
2 T chia
1/2 scoop protein powder optional
Directions serves 2
1. Pour all the ingredients in the blender starting with the milk and going in order.
2. Blend and pulse until smooth. Serve and enjoy. Enjoy a great start to your day.

Mango Green Smoothie (Naturally sweetened)
This was so wonderful. It was naturally sweet with all of the fruit that was in it. It was a refreshing delicious afternoon snack. It left me with a very satisfied feeling. You will love it.
The leaves were from a walk up the canyon yesterday. The colors are so amazing right now. Enjoy today. I hope you have a great weekend.
Ingredients
1 C almond milk
1 C frozen mangoes
1 1/2 frozen banana
1 apple core removed peel on
juice from a naval orange
2 T chia
1 handful spinach
Directions serves 2
1. Put all of the ingredients into the blender and blend until smooth. Serve at once. YUM!

Coconut Watermelon Mango Sorbet (No added sugar)
One of my favorite things this Summer is creating yummy sorbets with watermelon. I have never explored all the things you can do with frozen watermelon until now. Love it! Especially for the fat that you dont need added sugar most of the time just the natural sweetness of the fruit. Which is an added bonus.
One of my other favorite things lately is riding a bike. It is amazing how much more I can see than when I walk. We live in such a beautiful world. It is so pretty around here. I noticed the colors are just barely starting to change. Love it!
Ingredients
1 1/2 C frozen mangoes
1 1/2 C frozen watermelon
5 T canned coconut milk (Chilled)
Directions
1. Put all the ingredients into the blender and pulse and stir until it turns into a smooth consistency.
2. Scoop into bowls or freeze in airtight container until ready to serve.

Summer Fruit Frappe (no added sugar)
Today I got to talk to my son Derek on the phone (What a gift to have telephones and hear from family and friends we love) when he was on his way to Michigan to serve a mission for The Church of Jesus Christ of Latter Day Saints. I admire him, and the things he is learning, and the way he is serving with his whole heart. It hit me again today. I have been blessed to have some wonderful children in my life. My husband and I have learned so much from them. We continue to learn and grow from them. Our role has changed we are no longer their caregivers. We are just here to support and love them as they go on to accomplishing great things in their lives. The Bonus is we get to have in-laws and grandchildren added to our family too. Our 4th grandchild is coming in December. Life is full of many blessings.
I love Summer time. Everything about enjoying the water, weather, summer nights, summer fruit, and playing with family at the lake. I created a yummy drink that combined a lot of yummy fruits and spinach into a great power drink.
1 C water or almond milk
juice from 1 orange
1 C fresh or frozen pineapple
1/2 C fresh or frozen mangoes
1/2 C fresh or frozen peaches
2 frozen bananas chopped up
1/2 C blueberries or other frozen berries
3 T yogurt Optional (leave out vegan version)
1 C Ice cubes
2 T Chia
1 T flax seeds
1 C fresh spinach
Directions serves 2 or more
1. Pour ingredients into the blender starting with the water or milk and then add all the rest. Blend and pulse until nice and smooth.
2. Serve and enjoy a refreshing power drink. Great for a Summer day.

Mango Cake Bites (Raw)
I thought it would be fun to make some little bites out of mangoes. It is a fun little bite size snack that is great anytime of the day. I am a big fan of mangoes so I love adding them to things I make. Mangoes have such a wonderful flavor and it adds to the recipe that I add them to.
Ingredients
1/2 C water
1 C frozen mangoes chopped up
3/4 C cashews
1/4 C quinoa flour
3/4 C unsweetened coconut
2-3 T honey
3 T coconut oil
unsweetened coconut to roll them in
Directions
1. Pour ingredients into the blender or food processor starting with water and mangoes.
2. Blend until smooth and creamy.
3. Then add the remaining ingredients and pulse and stir until all smooth.
4. Put in the freezer or fridge until it starts to harden.
5. Roll into small balls. Then roll into coconut that is in a small bowl or plate.
6. Place back in fridge or freezer depending how hard you want them. Allow time for them to harden. 7. Store in an airtight container. Eat and enjoy!

Mango Gelato
The weather has been heating up around here. I love the sunshine and blue sky. We enjoy a nice evening on the lake. This is a sweet time of year.
This is a wonderful treat that is very refreshing. You could use another kind of fruit. It tastes so good with the mangoes in it. Yum! If you want it harder leave in the freezer for a couple hours.
Ingredients
Directions serves 4
1. Pour ingredients into the blender and let it whirl until all creamy. You may have stir in between the pulsing.
2. Pour in cups and serve, or freeze in freezer if you want it more solid.
3. Enjoy a yummy treat.

Mango Oatmeal Muffins
Ingredients
2 3/4 C spelt flour or whole grain flour
1/2 C quick oats
1 tsp baking soda
2 tsp baking powder (aluminum free, please)
2 tsp cinnamon
2 eggs, lightly beaten
1/2 C almond milk
2/3 C honey
1 tsp. vanilla
1/2 C coconut oil
1 C Mango puree (mashed mangoes)
Directions makes 18-24 muffins
1. Preheat oven to 350
2. Grease muffin pans.
3. Mix together dry ingredients in a large bowl.
4. In a medium bowl, combine the eggs, milk, honey, vanilla, and the puree mango. Add wet mixture to dry ingredients stir until just blended.
5. Fill muffin cups.
6. Bake 10-15 min. Take out of pan and let cool.

Mango Strawberry Coconut Frappe (Healthy)
I love creating different creamy fruit combinations. I also love mangoes and strawberries so this is a wonderful smoothie for me. These kind of drinks are fun to drink all year long, but especially fun to make in the warmer weather. This recipe is fast and easy to make.
Ingredients
1 C frozen mangoes
1/2 C frozen strawberries
1 C canned coconut milk
1 T honey or vegan sweetner
6 ice cubes
Directions serves 1-2
Put all the ingredients in the blender and let blend until nice and creamy. Serve right away.

Blueberry Mango Swirl
This drink is a great powerhouse, mixing together mangoes and blueberries. The fruit gives it a nice sweetness so no added sugar required. It is a wonderful way to refresh yourself anytime of the day.
Ingredients
1 1/2 C almond milk
1 frozen chopped up banana
1 C frozen mangoes chopped up
1 C frozen blueberries
1/2 C water
Directions serves 2
1. Pour into the blender milk, banana, mangoes. Blend until smooth.
2. Pour into glasses dividing it evenly.
3. Then you can wash out the blender so the blueberry mixture will be brighter.
4. Pour in the blueberries and water into the blender. Blend until smooth.
5. I poured the thick mixture on top of the mango mixture dividing it evenly.
6. Then use a wooden or medal skewer and gently swirl the stick through the drink. It is your turn to create your on design. Have fun with it. :) Enjoy! Serve right away.

Pineapple Mango Bites
I am a big fan of pineapple and mangoes so why not put them in a muffin bite? That is what I did. They turned out moist and sweet. They would be great for breakfast or a snack.
Ingredients
1 1/2 C oatmeal old fashioned
1/2 C plain Greek yogurt
1/2 C almond milk
1/2 C honey
2 T coconut oil
1 egg
1 banana, mashed
1/3 C mango, diced
1/3 C pineapple, diced (I used fresh)
1/2 C coconut, unsweetened, shredded
1/3 C oat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt.
Directions (Makes 12 muffin-sized bites)
1. Preheat oven to 325 degrees. Grease muffin tins or fold in parchment paper. In a large bowl, mix together oatmeal, yogurt, milk, honey, and coconut oil.
2. Fold in egg, banana, mango, pineapple, and coconut.
3. Stir in oat flour baking powder, baking soda, and salt. Let it rest for 5 to 10 min.
4. Put mixture in muffin tins. Bake for 25 to 30 minutes.

Raspberry Mango Almond Coconut Crumble (gluten free)

I hope you got to honor the fathers in your life this weekend. My husband and I had both of Dads for dinner and one daughter. That was a nice treat. All of our other children were out of state. We missed them but, we had a very nice day. I am surrounded by wonderful men in my life and I am grateful for that.
Ingredients:
2 fresh mangoes peeled and chopped up
4 T old fashioned oatmeal
4 T almond meal (ground up almonds)
3 C fresh raspberries
1/4 tsp almond extract
zest and juice from 1 lime
topping:
2/3 C unsweetened flakes coconut
1/2 C chopped almonds
5 T almond meal
5 T brown sugar or honey
1 T coconut oil
top off with dollop of cream or ice cream
and fresh raspberries
Directions: Serves 6 to 8.
1. Heat oven to 400. Great and 8 X 8 pan.
2. In a bowl stir together gently the first 6 ingredients. Pour into greased pan.
3. In a small bowl fold together the topping with a fork. Spread on top of the filling.
4. Place in oven. Bake for 10 min. Then cover with foil loosely and let it cook another 30 min.
5. Serve in bowls and eat plain or serve with ice cream or whipped cream and top with some more berries.

Sunrise Smoothie
I loved this smoothie. It was sweet with out adding any other sweeteners. The fruit made it the perfect sweetness. It was a nice refreshing drink that would be great any time of the day. If the fruit was frozen it would even be more refreshing. Yum! It is a great way to enjoy summer by enjoying the summer fruit that is available. :)
Ingredients: 2 servings
2 mango's peeled and chopped up
1 C pineapple (I used fresh)
juice from 1 orange
juice from 1 lime
a banana would be wonderful too
1 C of ice
Directions:
1. Pour it all into the blender and blend until smooth!

Mango Strawberry Smoothie
So we went and joined the Recipe Redux club, and we are so excited about it! Recipe Redux is a once-a-month recipe share where all of the participants share healthy recipes based on a monthly theme. And since healthy is our middle name (well, not really), we decided that it would be lots of fun.
From now on, once a month on the 21st, we will be sharing a recipe for Recipe Redux and also linking to the other healthy blogs that participate. That way you can find some other wonderful resources for eating healthy!
This month's theme is Summer Beverage, which is awesome because this is a perfect time of year for a cool, fruity drink. This Mango Strawberry Smoothie is just what the doctor ordered. Mmmmmm . . . fresh mangoes. . . .
Serves 2-3
Ingredients:
1 fresh mango peeled and pit removed
1 C frozen blueberries
1 C fresh or frozen strawberries
1 frozen banana
1 C almond milk
1-2 tsp fresh lime juice (optional)
Fruit for garnish
Directions:
1. In the blender pour in the milk and then the remaining ingredients. Let pulse until completely blended. Pour into glasses and serve.

Mahi Mahi Tacos

Ingredients:
1 Lb Mahi Mahi
2-3 Roma tomatoes cute up in chunks
1 mango cut in small pieces
1/8 purple onion chopped in small chunks
salt and pepper to taste
corn tortillas
little cheese Optional *
Taco sauce tasted good, salsa would taste good too. optional*
Directions;
1. Heat fish in skillet with 1 T olive oil . Heat on both sides a couple minutes till flakes apart with a fork. (No pink left)
2. Heat a small fry pan with a small amount of oil. Cook tortilla till slightly brown on both sides.
3. Fold Tortillas in half. Put fish and the vegetables and fruit of your choice. Pour a little taco sauce or salsa on top. Best if served warm. Enjoy a tasty healthy quick meal.

Mango Kiwi Salsa

This is a fun food that makes me feel like it's still Summer. =) This is a nice side that you could eat with chicken, tilapia, chips, crackers, quesadilla, tacos, burritos, or...?. It adds some great nutrition and will add some life to your meal.
1 C Mango Diced
2 Kiwi Diced
2 T Red Onion Diced
2-3 T Cilantro chopped in small pieces
1/2 -1 T Lime Juice
1/4 -1/2 tsp salt
1/8 tsp pepper
1. Combine the Kiwi and Mango. Then add the remaining ingredients. Stir till combined.
Best served fresh! Enjoy!
