Mango Oatmeal Muffins

2 3/4 C spelt flour or whole grain flour 
1/2 C quick oats
1 tsp baking soda
2 tsp baking powder (aluminum free, please)
2 tsp cinnamon
2 eggs, lightly beaten
1/2 C almond milk
2/3 C honey
1 tsp. vanilla 
1/2 C coconut oil
1 C Mango puree (mashed mangoes)

Directions makes 18-24 muffins
1. Preheat oven to 350
2. Grease muffin pans. 
3. Mix together dry ingredients  in a large bowl.
4. In a medium bowl, combine the eggs, milk, honey, vanilla, and the puree mango. Add wet mixture to dry ingredients stir until just blended.
5. Fill muffin cups.
6. Bake 10-15 min. Take out of pan and let cool.
