Italian Cherry Ice (Low sugar)


 I love cherries this time of year. Yum!



 Cherry season is here and it makes me really happy. I love cherries. It is wonderful when you buy a bag of them and they are perfect sweetness and nice and firm. There are many health benefits to them too which is another bonus. Here are some of the benefits.

I thought it would be fun to make my own Italian Cherry Ice without all the additives. It was refreshing and delicious. I hope you enjoy it too.


 Ingredients

2 C Ice Cubes
40 cherries washed and pitted
2 T chia
1 T honey Or sweetener of choice (it may be sweet enough with out it)

Directions   serves 2-3

1. Pour all the ingredients into a high powered blender starting with the ice, and blend until smooth.
2. Serves into cups and enjoy!

Apple Cherry Salad

 I love when I can enjoy a salad with very little dressing and then I can just enjoy the natural sweetness of the vegetables and fruit. This is one of those salads. I just had it for lunch today. It tasted so good. It left me with a very satisfied feeling after I ate it. Yum! If you have a food chopper it will help to make the fruit and vegetable very uniform looking.

Ingredients

2  apples chopped
4 celery stalks chopped
1/4 C dried cherries or cranberries
juice from 2 oranges
1 T chia
2 T honey for vegan use another sweetner.
garnish with additional cherries

Directions serves 4

1. Put apples, celery, and cherries in a bowl.
2. Pour the juice evenly over the fruit. Stir to mix.
3. Sprinkle the chia on top. Drizzle the honey on top. Toss until all mixed.
4. Garnish with more dried fruit if desired.

Fruit and Nut Chocolate Bites (no added sugar)


These are inspired after eating the chocolate cherry Kind Bars. They are so expensive to buy and so I thought it would be fun to make my own healthy version of them. No added sugar either. You make them ahead and have them when ever you want them for a lot less money. Mission accomplished! Great little healthy snack. 

Ingredients

3/4  C dark chocolate chips
1 T coconut oil
1 C dried fruit (I used  1/2 C cherries and  1/2 C pomegranates) 
2 T coconut oil
5 T chia *optional
1 C cashews unsalted
1 C almonds unsalted
1/4 C dark chocolate chips

Directions

1. In a small bowl place chips and oil. Put in microwave for 1 minute and then stir. Then put back in for 1 min. Stir again, and place in fridge to thicken a little. 
2. In blender pour all of the rest of the ingredients. pulse and stir. I left the nuts a little chunky. 
3. Scoop and roll into balls. 
4. Dip into chocolate and place on greased surface or non stick surface. 
5. Place in fridge to harden. 
6. Store in airtight container. Enjoy!

Cherry Chocolate Caramel Granola Bars


This is a healthy snack. That is full of protein, antioxidants, low is sugar. My daughter says she doesn't like cherries and she really liked these. She even packed some for work. These are healthy enough to eat for breakfast too.  



Caramel



Ingredients

1 C canned coconut milk (full fat)
1/4 C honey
2 T coconut oil
1/2 C chia seeds
1/2 C unsweetened shredded coconut
2 C old fashioned oatmeal
1/2 C dried cherries chopped up small
1/2 C dark chocolate chips chopped in small pieces


Directions   makes 16

1. Pour into small saucepan milk, honey, and oil . Stir on medium heat. You may want to have on medium low part of the time. Be careful to not let it burn.  Cook and stir often. It should be cooked down until it becomes very thick. Like the picture above. It is soft ball stage.
2. In a medium sized bowl pour in chia, coconut, oatmeal, and cherries. Stir together until all combined.
3. Pour hot caramel over the oatmeal mixture. Stir until completely mixed together.
4. Fold in the chips.
5. Pour into square parchment lined pan or greased. Press mixture down with the spatula.
6. Place in fridge to harden. Cut into 16 squares. Store in air tight container in the fridge.

Cherry Oatmeal

One more post today for the National Dairy Council and the Quaker Oats Center for Excellence. We love oats. They are sometimes easy to overlook when you are trying to eat whole grains. They are so familiar that we sometimes forget they are a legitimate, amazing whole grain.

Oats contain more soluble fiber than any other grain, which makes you feel full longer. They also contain beta-glucans, which have been proven to help lower LDL (bad) cholesterol, and therefore lower heart disease. Oats are okay for people who are looking to avoid gluten as long as they are certified gluten free.

I am loving the cherries this year. My mom had a large amount on her trees. They were heavenly. I have found having them in hot cereal is an amazing treat. I had never put them in my cereal until this year. It is a new favorite of mine. So very good. Love the color the flavor. Yum!

Ingredients

1/4 C water
3/4 C skim milk or 1% milk
1/3 C old-fashioned oatmeal
2 tsp honey
1/4 C of cherries
top with fresh cherries
sprinkle nutmeg
pour on additional milk if desired

Directions serves 1

1. Pour water and milk into the saucepan on medium heat. Then stir in oatmeal and honey.
2. Let oatmeal come to a low boil. Turn heat to low. Cook until to desired thickness.
3. Take off the heat. Add 1/4 C of cherries to oatmeal, and stir in.
4. Pour into bowl. Top with cherries. Sprinkle on some nutmeg. Pour on a little milk if desired.  Enjoy!

Toasted Quinoa and Fresh Cherries

I have been spoiled this year by my Mom's cherry trees. They have tasted amazing. I love the beautiful vibrant color of cherries too. It is such a wonderful time of year.

I had this brilliant idea last night to add fresh cherries to my quinoa. I got up and made it this morning. It was a great combination. I am going to be having this again soon. Yum! Enjoy some cherries today.

Ingredients

1/2 C washed quinoa
1 T coconut oil
1 C almond milk
1/2 C water
1 T honey or another sweetener of your choice
1/2 tsp cinnamon
fresh cherries cut up
extra milk for on top if desired





Directions serves 2

1. Heat a small sauce pan on medium heat.
2. Pour in quinoa
and oil and stir and toast a couple minutes
3. Pour in milk, water, honey and cinnamon.
4. Let mixture come to a low boil. Turn down the heat to low and let cook about 20 min or until liquid is absorbed.
5. Serve into bowls and place cut up cherries on top. Pour on a little more milk if desired. Serve.
6. Store leftovers in the fridge in air tight container.

Cherry Muffins




I love cherries! These taste a lot like bluebeery muffins. They were great. I liked how they were nice and tender.



1/2 cup coconut oil or butter
1/3 Coconut sugar or 1/2 sugar
1 teaspoon vanilla extract
1 large egg
2 cups spelt flour or wheat (5C Spelt 2 Kamut 1 Brown Rice 1 C Buckwheat) extra afterwards
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup coconut milk or milk
1 1/2 cups fresh cherries, pitted and chopped, or 1 (12-ounce) package frozen cherries, defrosted and chopped (I pulsed them in the blender)

1. Grease muffin cups Preheat oven to 350

2. Beat together oil and sugar till light. Then beat in vanilla then add egg.

3. Mix together in bowl dry ingredients spelt flour, baking powder, and salt. Stir into oil mixture. Then stir in milk.

4. Fold in cherries. Scoop batter into muffin cups.

5. Bake 10 to 15 min in oven

Yummy Cherry Summer Salad

I love cherries! This was another great way to use them. I think often when we have fruit salads, we think they need a topping. I loved just eating with no topping. It was so good! I think cherries get overlooked for fruit salad. I loved the color of the kiwi.


2 C. Cherries (cut in half)
4 Kiwi chopped in small pieces
4 clementines divided into small pieces
2 gala apples chopped in small pieces
2 nectarines chopped in small pieces
1 C grapes

Toss all the fruit together and enjoy! It was a refreshing salad and healthy!

Oatmeal cookiest

These are healthy enough you can eat them for breakfast. My daughter loved the dough. :) I made them without egg and they worked out very well. They were nice and moist. Hope you enjoy them.
1 C Unsweetened Coconut
3 C Oatmeal
1/2 C Water
1 1/2 Tsp baking soda
1/2 tsp kosher salt
1/2 Coconut oil or oil of your choice
1 tsp vanilla or almond extract
1 C Sucrant or sweetener of your choice
1/2 C Ground Flax
1 1/2 c. Spelt, Groats, Brown Rice, Kamut I ground up 5 C Spelt 1 C Groats, Kamut Brown Rice
1 tsp. Guar Gum (Helps to make it less crumbly, and holds it together. You can get it at the health food store)
1 C. Dried Cherries, Raisins or Chips (I liked them best plain)

1. Heat oven to 350. Toast coconut. Till golden brown around 5-7 min .

2. Mix Oil, Extract and water together.

3. Mix all the dry ingredients together. Then add to wet ingredients. Mix until well blended.

4. Add Cherries, Chips or Raisins if you are adding them.

5. Bake at 350 for 8 to 10 min. Till done.

Chocolate Chip Cherry Cookies


I have recently really come to enjoy cherries in foods. I have always enjoyed them fresh. Having a cherry in a chocolate candy is not something I like. I haven't made cookies with dried cherries in them before, I really like these. They have an interesting combination, but they really tasted good!
2 C. whole wheat flour
1 C. spelt flour
2 tsp. baking soda
1 tsp kosher salt
2 T. cocoa
1/2 C. unsalted butter, softened
1/2 C. Coconut oil or butter
2/3 C. Sucanat or brown sugar
1/3 C. Xagavae or 2/3 C. sugar
3 eggs
1 tsp. vanilla
2 C. Old fashioned oatmeal
1/2 C. natural peanut butter
1/2 C. almonds (ground finely in food chopper)
1 C. dark chocolate chips
1 C. dried cherries (Unsweetened I found them in bulk at the health food store.)

Bake at 350 Degrees. Line cookie sheets with parchment paper or lightly grease.
combine first 5 ingredients together. Set aside. In large bowl beat sugars with butter, coconut oil beat 3 minutes. Beat in eggs, vanilla and peanut butter. Add oats and almonds. Beat on low till combined. Beat in flour mixture. Stir in chips and cherries. (next time I am going to cut the cherries into smaller pieces.) Scoop dough on to cookie sheet. Bake 10 to 12 min. Allow to cool for 5 minutes on cookie sheet before taking them off. Hope you enjoy them.
