Whole Grain Pancakes


I am picky about pancakes. They have to be just the right mix. I don't like them dry. I like them having some moistness to them and being light as well. These fit my requirements nicely.They can be made quickly and they don't heat up your kitchen. They make a nice snack for later if you have leftovers too. :)

Ingredients:
2 C whole grain flour (I just used spelt)
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
2 T chia
2 eggs
2 T olive oil
2 T honey
1 1/2 C almond milk unsweetened
top with your favorite topping.

Directions:
1. Heat up griddle to about to about 300 degrees. Grease with oil.

2. Mix all the dry ingredients in a bowl. Stir together with a wire whisk.

3. Add eggs, oil, honey and milk, Stir until just mixed.

4. Pour the batter on to griddle. Cook until light golden on both sides. Top with your favorite topping. I love them with homemade jam.

Golden Whole Grain Waffles

I had not made waffles for a while and decided to try a new recipe. I was very pleased by the results. The flavor, and texture were wonderful. I love when they are nice and crisp. Yogurt and fruit would be wonderful on them.

Ingredients:
2 C whole grain flour (I used spelt with a little kamut)
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 C buttermilk or kefir
1 egg
2 T grape seed oil or coconut oil
1 T vanilla * optional
1 T honey
2 egg whites
Buttermilk syrup
toppings fruit, yogurt etc...



Directions:
1. In a bowl pour in all the measured dry ingredients. Whisk until all combined.

2. Then stir in the milk, 1 egg, oil, vanilla, and honey. Set aside for 5 to 10 min to let it grow a little.

3. In a separate bowl beat the egg whites till they are stiff and have a glossy look.

4. Fold the egg whites into the waffle mixture until combined.

5. Heat waffle iron till nice and hot. Spray or brush the iron with oil. Pour in waffle mixture. Cook until the waffles are golden and crisp. They came out nice and crisp. Serve immediately you will get the best results.

* You could put them in the oven on a cookie sheet. Have the oven set on a low heat to keep them warm until serving.

Flax and Mixed Fruit Muffins

I made these over the weekend. They make a wonderful Fall muffin. They were moist and had a great flavor. It has been fun to have extras, to eat this week for a quick breakfast, or to put in school lunches. It is a great way to get flax seed in your food. You could change this recipe around by adding different fruits.

Ingredients:
makes about 20-24 regular muffins

1C dried fruit mix of your choice
1 1/2 C hot water
4 C whole grain flour (I used spelt, kamut, brown rice mix)
2/3 C ground flax seed
1 T baking powder
1 tsp baking soda
3/4 tsp salt
1 tsp pumpkin pie spice
2 eggs beaten
2 C plain yogurt or vanilla yogurt
1/2 C honey or 1 C sugar
1/2 C coconut oil or oil of your choice
* 1/4 to 1/2 C chopped nuts Optional
Directions: Bake at 350*

1. Pour 1 1/2 C hot water over the dried fruit and let sit for a few minutes.

2. Measure and put dry ingredients in a mixing bowl.

3. In another bowl eggs, yogurt, honey, oil and beat together.

4. Drain the liquid off the dried fruit. Save 1/4 C of the water to the wet mixture.

5. Stir in the wet mixture into the dry ingredients. Don't over stir.

6. Then fold in the fruit.

7. Grease muffin pans. Scoop the muffin mixture into the cups.

8. Bake 15-20 min.

*I read if you cook flax seed at 350 or below it doesn't lose the benefits of Omega 3 that is in it. You can also replace eggs in a recipe with 1 T ground flax seed to 3 T water per egg.

Whole grain Applesauce Bars


Some got frosting and, some I just sprinkled with powdered sugar.
I enjoyed the first serving. It had a nice texture.
I got them ready to give my friends for their dinner. I found putting the whole pan in the fridge for a little while, made them easy to cut and helped the foil not stick on to them.


It is that wonderful time of year when all the leaves are changing. I went on a walk today and just soaked in all the color. It was a delicious day. It is also that time of year to find things to make with apples. This recipe is a wonderful way to enjoy your applesauce. I used quince sauce that I had made it worked great too. I love all the whole grains and spices, working with the applesauce to make a great flavor combination. This would be a great breakfast or snack. You could just sprinkle on some powdered sugar instead of frosting. I used frosting because I was taking someone some for their dinner.



Ingredients:
2 C unsweetened applesauce or quince sauce
1 C honey or 2 C sugar
1/2 C water
1/4 C coconut oil or oil
4 C whole grain flour (I used combo of spelt, kamut, and brown rice)
2 1/2 baking powder
2 tsp cinnamon
1 tsp salt
1/2 baking soda
1/2 tsp nutmeg (I used fresh nutmeg)
1/2 tsp cloves
1 C raisins *Optional


Glaze
2 C powdered sugar
3 T coconut oil or 3 T butter
1 tsp vanilla
1/4 C milk
1 tsp pumpkin spice* optional

Directions: Heat oven to 350

1. In a big bowl, beat, sugar, sauce, water, and oil until all blended. Set aside.

2. In a small bowl mix all the dry ingredients together.

3. Then stir the dry ingredients together with the applesauce mixture. Stir until moistened.

4. Stir in raisins if desired. Then put in a greased jelly roll pan. Spread evenly in the pan.

5. Place in preheated oven and bake 15-20 min. or until toothpick comes out clean.

6. Mix up glaze if desired and spread on when the bars cool, or sprinkle with powdered sugar.

Whole Grain Homemade Hamburger Buns (Low gluten)

When I did this post, I talked about it being hard to find a healthy choice of hamburger buns. Next time you are in the store look at the list of ingredients in most of them. I have heard others say it is easy to make buns, yet I had never tried it. So when I was thinking about making dinner tonight. I decided on hamburgers. I realized I didn't have buns, so I came up with the brilliant idea to give them a try. I used the same basic recipe for the hamburgers as last time. I changed the meat portions to half turkey and half ground beef. I also cut up have a yellow pepper into really small pieces and put in in the meat. It tasted wonderful.

I was pleased to find how easy the buns were. They also had a really good flavor, and they are healthy on top of that. You can't beat that. I now know how to make hamburger buns. It is wonderful to learn new things. We laughed when my son grabbed to buns, and didn't cut them open. He thought that was how you were suppose to eat them. :) It is wonderful to have children around they keep us smiling. :)

These were tasty hamburgers. I had some wonderful tomatoes to put on them. They were the perfect shade of red, and tasted wonderful.

Ingredients: made 12 good size buns

1 1/2 C warm water
6 T oil ( I used olive oil)
5 T honey
3 eggs
1 T and 1 tsp yeast
2 tsp sea salt
5 to 6 C whole grain flour *(I used the mixture spelt, kamut, and oats. You can use 1 C white flour to help it hold together better )

Directions:

1. In bread mixer add water, yeast and honey. Let sit in the bowl 5 to 10 min to let it grow.

2. Then add oil, eggs, salt, and 3 C of whole grain flour (I used the low gluten mix). Then add more flour till it pulls away from the bowl. Knead it 3 to 5 min with the machine. The dough should still be sticky. Then let it rest for 10 min.

3. I then put oil on my hands and rolled them into balls. Then placed them on a greased cookie sheet. Let rise till double.

4. Bake in a preheated oven at 375 degrees. For about 12 to 15 min., till a light golden color. I rubbed butter on top of them.

5. I put them on a cooling rack to cool. It also helps them to not over bake on the hot cookie sheet.

6. Slice and serve them, with your favorite hamburger recipe. You could use them with other kinds of meat too.

* I ground earlier this week 4 C spelt 2 C kamut and 1 C to 1/2 C of each oat groats, brown rice, and buckwheat, and you could use some white flour. You could use whole wheat flour, or 1/2 wheat and 1/2 white flour.

German Whole Grain Pancakes

I had a couple of my daughters come home for the night. I thought it would be fun to make them breakfast before they left in the morning. So I came up with this healthy version of German pancakes. It was fun because one of my daughters that was visiting used to make them when she lived at home. It was a quick easy breakfast. Tasty too. I had a few left over, so I cut them up and put them away in the fridge. They made a nice snack for later.

Ingredients:
1/4 C butter
9 eggs
1 1/2 C whole grain flour or some white flour
1 1/2 C milk or kefir
1 tsp cinnamon
1 tsp salt
Buttermilk syrup
Fruit toppings

Directions

1. Heat oven to 400

2. Put butter in 9x13 glass pan. While oven is preheating put pan in the oven. For butter to melt.
Don't let the butter burn.

3. In your blender pour in the eggs, flour, milk, cinnamon and salt. Blend about 2 min.

4. Take the pan out of the oven, and pour the batter over the melted butter. Bake 20 to 25 min.

5. Serve with the fruit, and honey almond buttermilk syrup. Yum!

Whole Grain Strawberry Bread


My daughter came over the other day, and made this for us. It would be a fun Valentine treat. It tasted good and was a fun treat. We had fun baking together. :) Cooking is a fun way to spend time together as a family.

3 C Whole grain flour  ( I used 2 C Spelt, 1/2 brown rice, and 1 C Kamut)
2/3 C honey
1 T cinnamon
1 tsp baking soda
1 tsp salt
4 beaten eggs
1 1/4 C olive oil or coconut oil melted
1/4 tsp vanilla
2 C cut up frozen strawberries

Directions: Makes 2 loaves

1. Heat oven to 350.

2. Mix all the dry ingredients together in large bowl. In separate bowl beat all the liquid ingredients together. Combine the two mixtures until completely moistened. Fold in the strawberries.

3. Pour into 2 greased and floured pans. Bake for 45 min to an hour.
