Delicious Zucchini(Bread) Waffles (Gluten Free)


It is a wonderful idea to find ways to add vegetables to the foods you make. My daughter was talking to me about the idea of starting at breakfast and adding the vegetables to what you are making. Great way to start your day. So I did that today and they were delicious. I have always loved zucchini bread this is a great way to capture the flavor with out all the sugar. 

You can either use gluten free flour or whole grain. I tried both and they worked great. I have a Cusinart waffle maker that makes them crispy on the outside and soft inside. Yum!!!


Ingredients

1 cup gluten free flour * or whole grain flour
1 1/2 cup water
1 egg
3 Tablespoons of olive oil
3 Tablespoons of coconut sugar or other sweetener
1 cup grated zucchini
2 Tablespoons of baking powder
1 teaspoon of cinnamon
2 Tablespoons of chia * optional

Directions serves 2-3

1. Preheat waffle iron and spray with non stick cooking spray.

2. Pour all the ingredients into the bowl and stir just until all mixed.

3. Pour on to hot waffle iron and bake to desired doneness.

4. Take out and enjoy. I have frozen the leftovers and put in toaster when I was ready to eat them. I love them with apricot jam.

* I used gluten free Namaste flour.

Golden Whole Grain Waffles

I had not made waffles for a while and decided to try a new recipe. I was very pleased by the results. The flavor, and texture were wonderful. I love when they are nice and crisp. Yogurt and fruit would be wonderful on them.

Ingredients:
2 C whole grain flour (I used spelt with a little kamut)
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 C buttermilk or kefir
1 egg
2 T grape seed oil or coconut oil
1 T vanilla * optional
1 T honey
2 egg whites
Buttermilk syrup
toppings fruit, yogurt etc...



Directions:
1. In a bowl pour in all the measured dry ingredients. Whisk until all combined.

2. Then stir in the milk, 1 egg, oil, vanilla, and honey. Set aside for 5 to 10 min to let it grow a little.

3. In a separate bowl beat the egg whites till they are stiff and have a glossy look.

4. Fold the egg whites into the waffle mixture until combined.

5. Heat waffle iron till nice and hot. Spray or brush the iron with oil. Pour in waffle mixture. Cook until the waffles are golden and crisp. They came out nice and crisp. Serve immediately you will get the best results.

* You could put them in the oven on a cookie sheet. Have the oven set on a low heat to keep them warm until serving.

Spelt Waffle Parfaits



Today I enjoyed a wonderful morning walk with my wonderful mother. I sure do love her. She is an amazing influence in my life. That teaches me from example and love. I will forever be grateful for her and the the way she has blessed me and my family. It was wonderful to see the signs of Spring coming. We saw some beautiful daffodils and new growth on trees. It is wonderful to see the world waking up. :) Happy Spring!

 I just spent a wonderful vacation in Mexico. The sunshine, water and blue sky were heavenly. It was a treat to have all that time with my husband. Life is sweet.

This is a fun way to serve your waffles. They could be a nice breakfast, brunch or dessert. Yum! I just finished eating one of them, and it tasted really good. You can decide what kind of fruit you want as your topping. You could even have make your own parfaits. There are a lot of fun options.

Ingredients

Spelt waffles
2 C spelt flour or whole grain flour
2 T cornmeal
1 tsp salt
1/2 tsp baking soda
2 large eggs
1/4 C coconut oil (Melted)
1 3/4 kefir or yogurt or buttermilk
2 T honey 
1 tsp lemon juice * optional
1 tsp lemon zest * optional
2 T cream tarter

Topping
plain yogurt
fruit: blueberries and bananas or fruit of your choosing

Directions:  makes about 8 waffles

1. In a medium size bowl mix flour, cornmeal, salt, and baking soda with a wire whisk. Set aside.



2. Separate the eggs in two separate bowls. Into the egg yolks stir in the oil, kefir, honey, * lemon juice and *zest. Stir into the flour mixture until all moistened.



3. Beat the egg whites adding the cream of tarter till stiff peaks. Fold into the flour mixture. Set aside. (I have found if I let it sit 5 to 10 min. It grow and makes better waffles and pancakes



4. Bake the waffles in a preheated waffle iron. ( I wanted them a little more crispy since I was adding them to the  yogurt.) Take out and let cool. Cut into small squares. You could freeze leftover waffles in zip locks.



5. Place a few of the cut up waffles in the bottom of the parfait dish. 

6. In a small bowl mix yogurt and jam together. Spoon some on top of the  cut up waffles. 

7. Put a few banana slices and some blueberries on top. Then top with some more cut up waffles. Then some yogurt on top and you could end with a little fruit on top. Enjoy!

*Seve right away so the waffles don't get soggy.

Oatmeal Kamut Waffles (Dairy Free)


 So this was a great way to start my morning. It is loaded with lot of great grains. It will fill you up fast and give you a boost of energy for your day. Having a nice healthy breakfast is an essential to help your over all energy level to stay high for the day.

Ingredients
1 C old fashioned oatmeal
2 T ground flax
2 T ground chia * optional
 2 1/4 C almond milk 
1 1/3 C kamut flour or other whole grain flour
1 T baking powder
1 tsp cinnamon
1/4 tsp ground or fresh nutmeg *optional
1/8 tsp salt
2 T honey (more if you want it sweeter)
3 T Oil grape seed or coconut oil
Toppings:
fresh fruit
fresh jam or frozen jam
buttermilk syrup 

Directions: make about 3 waffles

1. Heat waffle iron.
2. In a medium bowl pour in oatmeal, flax, chia* and milk.Let set about 5 min. While you gather the other ingredients.
3. Then pour in the flour, baking powder, cinnamon, nutmeg*, salt, honey and oil. Stir until just combined.  Let sit another 5 min so the batter can have a chance to expand.
4. Grease waffle iron. Pour on the batter and let cook according to manufactures instructions. Serve hot. With your favorite topping.  You can freeze leftovers in the freezer and cook in the toaster to thaw.

Whole Grain Buttermilk Waffles

I hope that you like me are getting to enjoy the colors this time of year. I am amazed each year how pretty they are. These are some trees I saw this weekend. I loved the color of them. I was out on errands yesterday and there were so many pretty colors all around it was wonderful. :) We live in a beautiful world.

We found another great waffle recipe. I loved how they turned out crispy and not soggy. This picture turned out to be a fun one. We captured the powdered sugar falling on the the waffle. I love it! It was nice to have them whole grain and very tasty. They are easy to make too.   

Ingredients:
1 3/4 C buttermilk (I used milk and added 1 3/4 T vinegar)
2 eggs separated
1 pinch of cream of tarter
4 T oil (I used grape seed oil)
3 T maple syrup or honey  
2 C whole grain flour ( I used 1 C kamut and 1 C spelt)
toppings of choice
non stick spray

Directions: Heat waffle iron
1. Beat milk and egg yolks, oil and syrup together. In another bowl beat eggs whites with a wire whisk or hand beater. Beat in the cream of tarter. They should get nice and foamy in a couple minutes.

2. Stir in the flour to the egg yolk mixture. Then fold in the egg whites until all combined.

3. Grease waffle iron. Pour batter into iron. Cook according to your iron directions.

4. Serve while they are nice and hot. .

Whole Grain Blender Waffles with Berries

Blender waffles with Berries


This is a fun idea for a fast and yummy breakfast or snack. I loved being able to used the mixed grains in them as well. They had a great consistency and flavor. I served them at a class I taught and they really liked them. That is always a good thing. :) I hope you enjoy them as well.   

Ingredients:
1 ½ c. grains wheat or I used 3/4 C Spelt and 3/4 C Kamut
2 ¼ c. warm water & ¼ c. dry powdered milk (or 2 ¼ c. milk)
3 eggs
1 t. salt
1 T. honey
1/4 C ground flax* optional 
1 T baking powder
1 tsp baking soda

1/3 C oil
1/2 C Whole Grain flour (I used a Spelt mixture pf spelt, quinoa, brown rice and amaranth)
1 tsp cinnamon *optional
1/4 to 1/2 C Water to make it the right consistency
Berries for on top

Directions:

1. Pour grains, water and powdered milk into the blender. Let it blend 4 min or until smooth. Then just add the reaming ingredients (Except for the additional water).  Blend for about 2 more minutes till smooth.

2. Let the mixture sit for about 5-10 min to let it rest. Add additional water 1/4 C at a time to get to the right consistency. Blend in blender till all combined. 

3. Pour on to greased waffle iron or skillet and cook until they are done. 

4. Serve with berries. Yum! :)

Yummy Whole Grain Waffles

Pick your own topping. I like them with jam or fresh fruit. How do you like them?

These were a tasty treat! Waffles can be served anytime. My daughter just went to a reception where they served them. That sounded like fun. I thought it would be fun to have them on New Years Eve with a choice of toppings. =) Waffles are a popular item at our house.

Christmas came again yesterday, we have a new grandson ! =) A wonderful present to see a beautiful baby straight from heaven. Life just keeps getting sweeter. =) A wonderful way to bring in the new year! Happy New Year! :)

Ingredients:

2 C whole grain flour ( I ground up 1/2 C quinoa 1C oat groats 1/4 C kamut there was extra)
1/2 C cornstarch
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp cardamom
1 1/2 C kefir or plain yogurt
1/4 C Orange juice or milk
1/2 C coconut oil
2 eggs separated
2 T sugar (I used powdered)
1 tsp vanilla

1. Measure all the dry ingredients and put into a bowl. The first 7 ingredients. Stir to combine completely. I cut the coconut oil into the dry ingredients. As shown in the picture above. If you use a different kind of oil add to the liquid mixture instead.

2. Mix the kefir or yogurt, milk or OJ and egg yolks set aside.

3. In another bowl, beat the egg whites until soft peaks add the sugar and continue bating till the peaks are firm and glossy. Then beat in vanilla.

4. Pour the liquid mixture into the dry mixture. Stir until moistened.

5. Fold in the egg whites gently till combined. Shown in the picture above.

6. Pour batter onto hot iron. Bake until golden.

7. Serve hot with your favorite topping.
