Enjoying Fall and Easy Heathier Oatmeal Chocolate Chip Cookies




I think Heavenly Father is an amazing artist. I LOVE driving and walking around this time of year and enjoying the amazing artwork he creates. I took these pictures in my own backyard in the last couple days. I can't get enough of the natural beauty that is all around us.I hope you are having some time to enjoy it. As I mentioned before this time of year always seems like a wonderful time to turn on the oven and bake. Today was on of those days where I did that. I had Britney and my sweet grandsons over they loved eating the cookie dough as I was making these . I gave my grandsons a spoonful of cookie dough they were in heaven. Days like this are the best. The cookies were gobbled up.

Ingredients:  Makes about 2 dozen cookies.
1/2 C coconut oil
1 C brown sugar
2 eggs
3 T  natural peanut butter
1 tsp vanilla
3/4 tsp baking soda
1/4 tsp salt
4 C old fashioned oatmeal (I can never have too much oatmeal)
1 C  dark chocolate chips

Directions:
1. Beat the oil, brown sugar together until creamy. Add in the eggs one at a time. Then add the peanut butter and vanilla.
2. Mix all the dry ingredients together in a separate bowl. and stir into the wet ingredients. Just until combined. Then stir in the chocolate chips.
3. Heat oven to 350.
4. Place parchment paper on cookie sheets and scoop on to cookie sheets.
5. Bake in oven 8- 10 min.
