Graham Cracker Bites

Summer is flying by too quickly. I love this time of year, eating outside, evening walks, wonderful weather, water, summer fruits, and the list goes on and on.
    
These are from a graham cracker recipe that I adjusted.. It is graham cracker rolled up into a cookie. Hopefully healthier version than a regular graham cracker. They were a big hit with my grandsons.  It is a nice little snack. Don't over cook them. They were soft in the middle, and had a nice flavor.   


Ingredients:
2 C whole grain flour (spelt)
1 C oat flour
1/2 C sugar of your choice
1 tsp soda
1/2 tsp cinnamon
3 T honey
2/3 C coconut oil
3 T milk (I used almond milk)


Directions:
1. Stir together or sift all the dry ingredients.

2. Heat the honey and oil together for 30 sec. To get them to combine nicely.

3. Stir the honey mixture into the dry ingredients. Then stir in the milk until all combined.

4. Roll into balls.

5. Bake at 350 for 8 to 10 min

  1. my son is allergic to coconut. Would using Sesame Oil have the same taste as coconut oil or is there a different one you would recommend?
