Creamy Spelt Berry Oatmeal Cereal

Here is another great breakfast meal to try. This hot cereal tasted so good. It is a nice hardy cereal. Loaded with a lot of great whole grains. It is a great way to start out your day. I felt really satisfied after eating it.
I loved all the texture in it. It had a wonderful creaminess to it too. The great thing is we ate leftovers this morning that tasted great. It would make a great afternoon snack as well.

Ingredients: Serves 4
2 C milk (of your choice)
1 1/4 C old fashioned oatmeal
3 T ground flax *optional
1 to 2 T coconut oil (adds a nice creamy texture)
1/2 C raisins
1 1/4 C Spelt berries (You could use wheat or kamut)
2-3 T honey
1 tsp cinnamon
1/2 tsp freshly grated ginger * optional
topping ideas: freshly grated nutmeg, unsweetened coconut, dried cranberries, chopped nuts.

Directions:
1. In a saucepan bring the milk to a boil. Then stir in oats, oil and raisins. Turn down heat to low, cover with lid and let simmer 3 min.
2. Stir in cooked spelt berries, honey and spices, and cook for about 1 min. Till completly warm.
3. Top with your favorite topping. I poured a little milk on top too. Enjoy!
