Shrimp Kabobs

I hope that you had a wonderful Father's Day! We had a really nice one, lots of family around, and lots of good food. I am so grateful for all the fathers in my life. I am blessed by their love kindness and concern. My father and father in law are still living. it is wonderful to still be able to enjoy their influence on me and my family. Life is very good!

We really enjoy shrimp. It sounded like a fun idea to cook it on the barbecue. I had never tried that before. It was a wonderful success. My son came through and did a great job cooking the meat. :) I loved the flavor of the shrimp, it marinated over night. We will be having this again soon. I will share the steak marinade tomorrow.

Ingredients:

1 C olive oil
1/4 C fresh parsley or 1/8 C dried
juice from 1 lemon
2 T garlic chili sauce or 2 tsp chili powder
5 cloves of garlic minced
1 T tomato ketchup
1 T dried oregano
1 tsp salt
1 tsp fresh ground pepper
2 lbs Large shrimp peeled and deveined with tails attached (Costco)
wooden skewers (soak in water prior to putting the meat on them)


Directions:

1. In blender or bowl pour in all the ingredients for the marinade. Blend or mix for a couple min.

2. Pour shrimp in large zip lock bag, pour the marinade over the shrimp. Seal the bag and refrigerate. Leave over night. Mix up a couple times, by moving your hands on the outside of the bag.

3. Heat up the barbecue. Put the shrimp on the skewers. Grill on each side about 5 min. You can baste on leftover marinade, while you are barbecuing if desired. We didn't baste and it had plenty of flavor. Delicious meal!

  1. That sounds delicious...we tried this a few weeks ago, but I would love to try out the marinade! And I think we need to get a Costco membership!

  2. Thank You! I hope you enjoy them. I know there are lots of places you can get shrimp. I just happened to get it at Costco this time. I had never gotten it there before.
