All About Buckwheat (Kasha)


We've been enjoying a couple of great buckwheat recipes lately, so we thought we'd highlight a little about this great grain.

Actually, it's not really a grain.

It's actually a fruit seed, not at all related to wheat. It's gluten-free and closer to rhubarb and sorrel. But you can use it as if it were a grain, roasted or unroasted (the roasted seed is also known as kasha), or as a flour.

Health Benefits
  • A good source of manganese, magnesium, and fiber
  • Its a great protein, containing all eight essential amino acids, including lysine
  • Gluten free!

What Buckwheat Is Good for
  • Combine buckwheat flour with whole wheat flour to make baked goods.
  • Add to brown rice for a pilaf
  • Boil up to make a great breakfast cereal
  • Add to soups and stews
