Yummy Whole Grain Waffles

Pick your own topping. I like them with jam or fresh fruit. How do you like them?

These were a tasty treat! Waffles can be served anytime. My daughter just went to a reception where they served them. That sounded like fun. I thought it would be fun to have them on New Years Eve with a choice of toppings. =) Waffles are a popular item at our house.

Christmas came again yesterday, we have a new grandson ! =) A wonderful present to see a beautiful baby straight from heaven. Life just keeps getting sweeter. =) A wonderful way to bring in the new year! Happy New Year! :)

Ingredients:

2 C whole grain flour ( I ground up 1/2 C quinoa 1C oat groats 1/4 C kamut there was extra)
1/2 C cornstarch
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp cardamom
1 1/2 C kefir or plain yogurt
1/4 C Orange juice or milk
1/2 C coconut oil
2 eggs separated
2 T sugar (I used powdered)
1 tsp vanilla

1. Measure all the dry ingredients and put into a bowl. The first 7 ingredients. Stir to combine completely. I cut the coconut oil into the dry ingredients. As shown in the picture above. If you use a different kind of oil add to the liquid mixture instead.

2. Mix the kefir or yogurt, milk or OJ and egg yolks set aside.

3. In another bowl, beat the egg whites until soft peaks add the sugar and continue bating till the peaks are firm and glossy. Then beat in vanilla.

4. Pour the liquid mixture into the dry mixture. Stir until moistened.

5. Fold in the egg whites gently till combined. Shown in the picture above.

6. Pour batter onto hot iron. Bake until golden.

7. Serve hot with your favorite topping.
