Easter Brunch Carrot Cake Muffins


 These carrot cake muffins are wonderful to eat anytime of day. It would be a lot of fun to eat them for an Easter breakfast or brunch. It would also be a fun way to welcome in Spring. :) They are loaded with healthy ingredients. I loved how mosit they tasted yum.


Ingredients
1 1/2 C kamut flour (or your choice of whole grain flour)
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 C grape seed oil
1/3 C raisins *optional
1 C grated carrots
1/3 C honey
1/2 C pineapple tidbits, drained, and dried off

Directions
1. Mix together flour, baking soda, salt, cinnamon, and nutmeg.
2. In a separate larger bowl, mix together wet ingredients. Gently stir in dry ingredients.
3. Pour in greased muffin tins.
4. Bake at 350 for about 20 min or until done.

Yummy French Toast in a pan with Strawberry Syrup

This would make a great Christmas brunch. It would make a great meal anytime. I think it was the best french toast I have had. The strawberry syrup made the meal complete. :)

Ingredients: serves 6-8
french toast
12 slices of whole grain bread
8 eggs
1 3/4 C almond milk or milk 
1 tsp vanilla (or almond flavoring would be yummy!)
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 C  brown sugar or sugar of your choice
3 T ground pecans 
3 T butter

syrup
2 1/2 C strawberries (frozen thawed)
1 tsp lemon juice
3 T honey


Directions: Heat oven to 350
1. Grease 9 X 13 pan.  
2. Place bread slices in pan overlapping them.
3. Beat or blend in blender eggs, milk, vanilla, and,  spices.  
4. Pour over the bread. You can cover and put in fridge over night or just continue to prepare.
5. In a small bowl mix the sugar, nuts and butter. Sprinkle over the bread.
6. Bake in hot oven for about 40 min or until knife comes out clean.
7. For syrup place the strawberries, juice and honey into blender and blend until smooth. 
8. Serve syrup with hot french toast. Enjoy!

* Cut up bananas, or top with berries, or both  would be delicious too.

Yummy Whole Grain Waffles

Pick your own topping. I like them with jam or fresh fruit. How do you like them?

These were a tasty treat! Waffles can be served anytime. My daughter just went to a reception where they served them. That sounded like fun. I thought it would be fun to have them on New Years Eve with a choice of toppings. =) Waffles are a popular item at our house.

Christmas came again yesterday, we have a new grandson ! =) A wonderful present to see a beautiful baby straight from heaven. Life just keeps getting sweeter. =) A wonderful way to bring in the new year! Happy New Year! :)

Ingredients:

2 C whole grain flour ( I ground up 1/2 C quinoa 1C oat groats 1/4 C kamut there was extra)
1/2 C cornstarch
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp cardamom
1 1/2 C kefir or plain yogurt
1/4 C Orange juice or milk
1/2 C coconut oil
2 eggs separated
2 T sugar (I used powdered)
1 tsp vanilla

1. Measure all the dry ingredients and put into a bowl. The first 7 ingredients. Stir to combine completely. I cut the coconut oil into the dry ingredients. As shown in the picture above. If you use a different kind of oil add to the liquid mixture instead.

2. Mix the kefir or yogurt, milk or OJ and egg yolks set aside.

3. In another bowl, beat the egg whites until soft peaks add the sugar and continue bating till the peaks are firm and glossy. Then beat in vanilla.

4. Pour the liquid mixture into the dry mixture. Stir until moistened.

5. Fold in the egg whites gently till combined. Shown in the picture above.

6. Pour batter onto hot iron. Bake until golden.

7. Serve hot with your favorite topping.
