Pear and Cranberry Pork Roast

This was fun to try something with pears. It added a nice flavor. I also had cranberries in it. You can't see them in the picture. :( The combination turned out really well. It made a nice Sunday dinner.

Ingredients:

3-4 lb pork Roast
4 Bartlett pears chopped in small pieces
1/4 of onion chopped up fine
1 c fresh cranberries chopped up fine (I did them in the blender)
1 1/2 tsp salt
1/2 tsp pepper
1/2 tsp sage
2 tsp thyme
1/2 tsp cardamom* Optional
3 T Honey
1/2 C water or chicken broth (I just used water)
2 T Cornstarch

Directions:

1. You could saute the onion in a frying pan first. Put the roast in a crock pot let. Throw all the other ingredients in and turn it on high. Should cook in 5-6 Hours. (It depends on how big of a roast you cook.) I like the pork really tender. I mixed cornstarch in to the sauce to thicken it up, after the roast was all cooked. You could put it in after breakfast and it would be ready by dinner. Easy meal!

*You could chop up some fresh cranberries for garnish.
