Almond Coconut Treats!
This is a quick and easy recipe. I changed a recipe that I got from a raw foods class at Bosch. They taste great! They hit the spot when you want a treat without a lot of calories, and healthy too. Everyone seems to like them.
1/4 C. Coconut Oil
1/4 C. honey
3/4 C. Almonds (chopped up in a food chopper)
3/4 C. Unsweetened fine shredded coconut.
Mix all the ingredients together, in a medium size bowl, until it all sticks together. Then form into balls, I used a cookie scoop. Then put in the freezer till hardened. (about 30 min) I then put them in a Zip lock bag (carefully). Put them back into the freezer until you want to eat them. Enjoy! Note: coconut is healthy, if you don't get the sweetened kind. :) You could try other variations!
