| Quinces are a combination between a pear and apple. They have a tart taste to them when they are raw. They are usually eaten cooked. When they are cooked they sweeten up and become tender and tasty. They can be used in place of apples in many recipes. They are usually available between September to December. |

| This is how I grated them. I washed them well, and then grated them with the peel on. Ingredients: 3 Quinces washed and grated 3 1/2 C Water 2 C honey 1 1/2 T fresh lemon juice 2 tsp lemon zest cinnamon to garnish Directions: 1. Pour water into sauce pan and let it come to a boil. 2. Pour in quinces, honey and lemon. Cook over medium heat. Cook until the fruit becomes soft. 3. Pour the hot mixture into blender. Process until desired consistency. 4. Serve warm or cold. Garnish with cinnamon. |
