Autumn Spice Oatmeal Apple Cake (Gluten Free)

 I hope that you are having a delightful Fall like we have. The colors are changing on the mountain. This yummy cake will be a delight to you and your family. We ate it warm and were in absolute in heaven. The cake could be eaten for a yummy breakfast as well. It could be enjoyed any season. 






Ingredients:
1 Cup Oatmeal
1 1/2 Cup boiling water
1/4 Cup avocado oil or coconut oil 
3/4 Cup honey
2 eggs
1 1/2 Cup almond flour or whole grain flour
1/4 tsp salt
1 tsp vanilla
1 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg 
1/2 tsp cardamom *optional 
1/4 Cup shredded coconut
1 medium apple grated
Unsweetened applesauce 
Can of Real Whipped Cream 

Directions: Serves 12 or more

1. In a saucepan boil water. Take off the heat pour in the oatmeal and let it sit for 15 min.

2. Cream oil, honey, and egg. Then add the oatmeal, flour, soda, cinnamon, nutmeg, cardamom, salt, coconut and apple. Don't over mix.

3. Pour into a greased 8x8 Bake at 350 for 25 to 30  minutes or till done.
4. Cut into squares. Add topping with apple sauce and a squirt of whip cream. Prepare for an amazing treat. Love this!!! 

(You could add nuts, or another kind of fruit in there too.) Enjoy today, it will never be here again. :)

Bob's Red Mill Protein Powder in a Smoothie


I was so excited when I found out that Bob's Red Mill had a protein powder. I went to the store yesterday and found it in the bulk section. I was so happy to give it a try. I had it in my morning smoothie it was wonderful. I am excited to do some more recipes with it. The fun begins.

Ingredients

1 C cashew milk or other milk
1 frozen banana
1/2 apple
1 C fresh spinach
1 T chia
3 T Bob's protein powder

Directions  Serves 1

1. Pour all the ingredients into the blender starting with the liquid. Blend until smooth.
Enjoy!

Mango Green Smoothie (Naturally sweetened)


This was so wonderful. It was naturally sweet with all of the fruit that was in it. It was a refreshing delicious afternoon snack. It left me with a very satisfied feeling. You will love it.

The leaves were from a walk up the canyon yesterday. The colors are so amazing right now. Enjoy today. I hope you have a great weekend.

Ingredients

1 C almond milk
1 C frozen mangoes
1 1/2 frozen banana
1 apple core removed peel on
juice from a naval orange
2 T chia
1 handful spinach

Directions   serves 2

1. Put all of the ingredients into the blender and blend until smooth. Serve at once. YUM!

Delicious Chicken Salad with Yogurt

I had this for dinner this week. It tasted so good. I love chicken salad but, don't love to eat all the mayo that is usually in it. So this is a recipe that uses no mayo at all. I love the kick the lemon adds to it as well. I saved calories by serving it on lettuce.It was a treat to have leftovers for lunch the next day. Delish! I hope that you are doing something fun this weekend. This is a wonderful time of year enjoy it!

Ingredients:
1 C of cooked chicken chopped in small pieces
1/2 C green onion chopped up
1 green apple diced up
1 C of red grapes chopped in half
1/4 C of unsalted cashew pieces or nut of your choosing
3/4 C celery chopped into pieces
1/2 C plain low fat yogurt
juice from 1 lemon
1/2 tsp garlic powder
salt and pepper to taste
Romaine lettuce to serve it on.

Directions: Serves 4
1. Place the first 6 ingredients into the bowl.
2. In a small bowl mix the yogurt, lemon juice and garlic powder together.
3. Pour over the salad and stir in. Add salt and pepper to your taste preference.
4, Scoop on to lettuce leaves and serve.
