Creamy Salmon Bisque (Dairy Free)
I hope you are enjoying the year and have nice things to look forward to. It is fun to set new goal and to have new things to work for. This is a great way to start out a healthy new year. Not on a "diet" I don't like that word. I like to look at it as a healthier way of living. This recipe will get you started on the right foot.
This is a nice creamy soup. My husband enjoyed 3 bowls of it. :) Our family has become salmon fans. I have never had salmon in a soup. I really enjoyed it too. Happy 2015.
Ingredients
salmon filets 1lb 8oz
3 1/2 C water
1/4 tsp dried thyme
1/2 tsp salt
1 lemon sliced
2 cloves garlic minced
7 peppercorns
3 black peppercorns
5 green onions chopped finely
1/4 C whole grain flour ( I used spelt)
2/3 water
1 tsp salt
3/4 coconut milk
1 T dried dill
2 1/2 to 3 T lemon juice
more salt and pepper if desired
Directions
1. In a pot put in salmon, water, thyme lemon and peppercorns. Bring the mixture to a boil. Then turn down the heat to simmer and cover and let simmer for 20 min.
2. Take off the heat. Strain. Take the skin off the fish if there is any (The skin will add more flavor). Chop up the fish and set aside. Save the fish broth
3. In the pot pour in the oil and heat to medium. Pour in the onions, and garlic. Stir and let cook a couple minutes. Then stir in the flour.
4. Pour in the fish stock. It equaled about 2 1/2 C. Add an additional 2/3 C water, fish, and salt. Stir all together and let the mixture come to a boil. Then turn down the heat and let cook about 5 minutes.
5. Then stir in the in coconut milk and dill. Do not let the mixture come to a boil again. Let the mixture heat all the way through.
6. You can eat warm or chilled. Enjoy!

Honey Salmon with Spicy Rub
Ingredients
Spicy Rub
1 T chili powder
1 tsp cumin ground
2 T chia *optional
1/4 tsp salt
1/4 tsp fresh ground pepper
Directions
1. Pour all the ingredients in a bowl and stir. If you are using chia. Blend together in a small chopper until it is all powdery. (I have a black and decker one. I love. Great for grinding up flax too.)
4 5 oz Salmon Filets
olive oil
2 T coconut oil or olive oil
1 T honey
Directions
1. Brush olive oil on to filets.
2. Pour some of the rub on to a dinner plate and put the fish on top and then turn to the other side until it is all coated. Repeat the same process with the other filets.
3. In a large skillet heat to medium heat. Pour in coconut oil and honey and stir around until it melts.
4. Place filets in pan and cook on both sides. Until cooked all the way through. I enjoyed getting some of the Rub that fell off into the pan and putting on top of the cooked filet.
5. Take out of skillet and serve. It would be great with a green salad and some Brown Rice.

Salsa on Salmon and Sweet potato |
Ingredients:
1 C chopped up mangoes
1/4 of purple onion chopped up
1/2 C red pepper chopped up
1/2 jalapeno deseeded
2 to 3 garlic cloves
1 handful of cilantro
juice from 1 lime
salt and pepper to taste
Other additions to the meal:
baked sweet potato
baked salmon
fresh pineapple
coconut oil
Directions:
1. Throw all the ingredients for the salsa in the blender or food processor except 1/2 the cilantro, salt and pepper, and the blueberries. Pulse quickly a couple time. I wanted to still have it slightly chunky.
2. Then throw in the blueberries and the rest of the cilantro. Pulse 1 or 2 times. Just until incorporated. Then add salt and pepper to your taste preference. Serve or store covered in the fridge till ready to eat. Yum!
3. I cut up a fresh pineapple.
4. Place 1T of coconut oil in a frying pan. Heat on medium heat. I put in a couple of pieces of pineapple to add to the flavor. Cook until done. You could also just wrap it in foil and bake in the oven.
5. Bake a sweet potato.
You have a great meal ready to eat. Have a happy weekend.

Salmon with Boysenberry Jalapeno Sauce

Ingredients:
4 Salmon fillets about 1 lb
2-3 T Oil I used coconut oil
3/4 C boysenberries or black berries
1 T honey
1/2 fresh jalapeno diced small pieces
Sea salt and fresh ground pepper to taste
Directions: Feeds 4
1. Heat skillet on Medium heat. Put in oil and heat. Place the salmon in the pan grill on both sides till nicely cooked.
2. In the meantime while fish is frying. Heat up the berries, honey and jalapeno. Stir until the berries are broken down a little bit. Then pour the sauce on top of the fish and put the lid on top of the frying pan. Turn to low and let cook a couple minutes. Serve

Citrus Marinade Stir Fry (Salmon)
This is another idea for how to cook salmon. I would have never thought of having grapefruit juice on salmon. It is really tasty. You can get the benefits from grapefruit juice too. This marinade could be used use on meat, chicken, or fish. I love being able to have salmon a new way. :) "Variety is the spice of life."
Citrus Marinade (makes enough for 1lb meat, fish, or 4 chicken breasts)
Ingredients:
1 lb Salmon 4 fillets or other meat
1/3 C grapefruit juice or orange juice (fresh is best)
1 T dried parsley or 2 T fresh parsley
2 T fresh lemon juice or lime juice
1 T olive oil
1 tsp dried thyme
2 garlic cloves minced
1/4 tsp pepper
2 T oil ( I used coconut oil) To cook fish or meat in.)
1 bag of broccoli stir fry or vegetables of your choosing
cooked brown rice* Optional would be a great addition
salt and pepper to taste
Directions:
1. Mix all the ingredients for the marinade in a bowl, and stir until all combined. Use immediately or you can store in fridge for up to 5 days.
2. Place the fish or meat in bowl with the marinade. Let sit for at least 20 min.
3. Heat a frying pan on med. heat on the stove, put oil in pan. Let the oil melt. Then add the fish and marinade.
4. I cooked the fish on both sides. Then I added the vegetables and put on the lid and let it steam for about 10 min on med. low. Serve!

Healthy Salmon Patties
It has been nice to include Salmon in our dinners more often. I remember as a child my Mom would tell me she was making Salmon for dinner, I was not thrilled. ;( I think my tastes have changed because I have come to enjoy it. My children have the same thoughts, when I am making salmon. They aren't too thrilled. When I made these for them the other night, I was happy with their response. Everyone liked it. I got positive comments about the texture. They were surprised it was salmon. It was a good night. :) Someone recently mentioned buying canned salmon. It is a great way to keep it on hand. I was pleased with the results of cooking with it. As I get older I appreciate more the efforts my Mom went to, to make healthy meals. Thanks Mom! :)
Ingredients: Makes 7-8 patties
14.75 can pink salmon (drained)
1 C bread crumbs (I toasted 6 slices of whole grain bread and put them in the blender)
1 tsp salt
2 eggs
1 tsp pepper
2 T fresh lemon juice
2 T lemon juice
1 leek chopped
1/2 C red pepper chopped
1 onion diced small pieces
1 tsp garlic powder or (2 garlic cloves minced)
1 tsp paprika
2 T olive oil ( to fry in)
Directions:
1. Mix all the ingredients together, only add half the bread crumbs. (Save the oil to cook in)
2. From into patties then pat remaining bread crumbs on both sides.
3. Heat pan to med. heat and pour in oil. Place patties in pan and cook till golden on each side. You could have lemon slices as a garnish. Yum!

Wonderful Rub for fish
We have tried this on both Tilapia and Salmon. It would prabally taste great on shrimp too. We have enjoyed them both Salmon and Tilipia so far. We have also cooked the fish on the barbecue one time and yesterday in the oven. They both worked out well. Sorry I didn't get a picture this time. :(
Ingredients:
2 T Chili powder
1/2 tsp Garlic Powder
1 tsp Salt
2 T Cumin
2 T Lemon Pepper
2 T Sweet Paprika
2 T Olive Oil
2-3lbs of Fish of your choosing =)

Directions;
1. Mix all the ingredients together.
2. Rub the entire fish with the olive oil. Then rub the spice mixture on the entire fish.
3. Preheat oven or grill. The oven was at 375. For the oven method we wrapped it in foil. We cooked it about 20-25 min. Or until the fish flakes with a fork. For the barbecue method. cook on medium heat. Cook 8-10 min on each side. (You may want to oil the grates)

Red Sliced Potatoes with Onions
Squash
Fruit Salad

Grilled Lemon Salmon with Cilantrro


Ingredients:
1.75lb Wild Salmon Fillet
1 T Soy Sauce mixed with 1 T Water
Juice from 1 Lemon
1 T Lemon Zest
2 T Ginger grated (I used my zester )
2 T Cilantro Chopped in small pieces
1 T Molasses Mixed with 1/8 C Water
5 or 6 Green onions chopped in small pieces
1 tsp. Liquid smoke
Directions:
1. I pulled the fillet out of the freezer and just put each ingredient on separately. You could mix them all together and pour it on at the same time. Either way works. marinade for 2 hours.
2. Preheat barbecue on medium high heat. Lightly oil grill.
3. Put Salmon on grill skin side facing up. Cook about 8 min.
4. Turn over apply a little more marinade. Turn down to medium and cook another 6- 8 min. Cook until it flakes with a fork.
5. Some great sides would be Quinoa, Brown Rice, or Barley. I have also mixed all 3 together they go well together. :) Here is a recipe for a grain side.
I served it with a Brown Rice 2/3 and 1/3 Millet, and had Cucumber cut in slices, with fresh pineapple slices. We Squeezed fresh lemon juice on it after it was cooked. Nice healthy meal Yeah!

Grilled Salmon

1.75 Lb Salmon Fillet (I cut it up into 5 pieces)
1/4 C Soy Sauce
1/8 C Honey
1/4 C Olive Oil
1/4 C Water
Dash of Liquid smoke
1 T. Minced Garlic
1. Mix together ingredients (except salmon) in a bowl. Put cut up pieces of salmon in marinade for a couple hours.
2. Preheat barbecue on medium heat. Lightly oil grill. *
3. Put Salmon on grill skin side facing up. Cook about 8 min.
4. Turn over apply a little more marinade. Turn down to medium high and cook another 6- 8 min. Cook until it flakes with a fork.
5. I heated the remaining marinade on the stove it got thick in just a few minutes. Then I poured it over the cooked salmon. It tasted great! I will be making this again. It was a nice change from chicken. My husband really liked it. :)
* Every barbecue is different so you may have to adjust your temp. according to your barbecue.
