Refreshing Strawberry Kiwi Chia Smoothie
So as you can see from my latest posts strawberry season is being enjoyed at out house. We love strawberries around here. We have been lucky to get some really yummy ones. We are doing are part in enjoying the season. :)
This is a yummy smoothie with mostly using the fruit at the sweetener. If you want to make it thicker cut down on the milk. You could have a nice soft serve treat. It will also thicken if you put it in the freezer for a while. It is a refreshing treat. You are also getting the benefits of Chia if you add that too. Read the health benefit to Chia here. :) It can be healthy and taste great at the same time.
Ingredients Serves about 3
2 C almond milk *Cut down to 1 1/2 C if you want it more like ice cream.
2 C frozen strawberries
2 kiwi peeled
1 frozen banana
2 T chia
1 T honey *optional
*You could add a handful of spinach too
Directions
1. Pour all the ingredients in the blender and blend until smooth. Drink right away or put in the freezer to thicken up.

Yummy Spinach Berry Kiwi Smoothie
I feel like Spring is coming. This smoothie will help you feel like Springtime. It is sunny hear today. The sky is blue. Yeah! There is snow on the ground but Spring is coming. I can feel it. :)
This smoothie is loaded with lots of great nutrition too. One of the ingredients Kiwi's are rich in Vitamin C and also Vitamin A, B6 & K. They also have folate, magnesium, phosphorus, copper and fiber. The seed contain omega 3. My 4 your old grandson loved this. :)
Ingredients:
4 kiwi peeled
2 bananas
1 C frozen berries (I used raspberries)
1/2 plain yogurt
1 C fresh spinach
2 T honey optional
1/4 tsp almond extract
3/4 C water
1 1/2 C ice
2 T flax seeds * Optional
Directions:
1. Pour all the ingredients into the blender and blend until smooth. Serve immediately.

Mango Kiwi Salsa

This is a fun food that makes me feel like it's still Summer. =) This is a nice side that you could eat with chicken, tilapia, chips, crackers, quesadilla, tacos, burritos, or...?. It adds some great nutrition and will add some life to your meal.
1 C Mango Diced
2 Kiwi Diced
2 T Red Onion Diced
2-3 T Cilantro chopped in small pieces
1/2 -1 T Lime Juice
1/4 -1/2 tsp salt
1/8 tsp pepper
1. Combine the Kiwi and Mango. Then add the remaining ingredients. Stir till combined.
Best served fresh! Enjoy!
