Healthy Chocolate Chip Cookie Bars (Gluten-Free)




This is a different kind of cookie than you'd normally make. It has no flour. It has no eggs. It requires a hearty blender or food processor, but other than that, it's simple to make. It makes a thick, hearty, healthy cookie your family will enjoy.

Ingredients

1 C dates
1 tsp baking soda
2 C white beans, drained
3/4 C honey (for sweeter  you could add 1 C honey)
1 C old-fashioned oats  (Gluten free oats)
3 Tbsp coconut oil
2 tsp vanilla extract
1/2 tsp baking soda
2 tsp baking powder
1/4 tsp salt
1 C chocolate chips


Directions

1. In a small container, cover the dates in hot water. Add 1 tsp baking soda and give them a gentle stir. Let the dates rest on your counter for a couple of hours. Tip: Doing this--soaking the dates in water and baking soda--will soften the dates and keep them soft even after baking. Try it for any recipe where you use dates.

2. Preheat the oven to 350 degrees F. Blend the rinsed dates, white beans, and honey together in a high powered blender or food processor. Mix  everything else (except for the chocolate chips).

3. Mix in chocolate chips.

4. Press the mixture into an 8 x 8 pan. Cook in preheated oven for 20 to 25 minutes. Let cool, then serve.
