It really adds to my enjoyment eating vegetables preparing them in different ways. I know my family feels the same way. Presentation is such a big part of serving food. I am always excited when I come up with a nice way to serve them. This recipe was a combination I had never tried before. I really liked it. I hope you do too.
Ingredients:
3 to 4 sweet potatoes washed and scrubbed
3/4 tsp paprika
3/4 tsp curry powder
3 T olive oil
Salt
3 ripe avocados
1 jalapeno pepper diced in small pieces
juice of one lime
salt and pepper to taste
*1/4 tsp chili powder* optional
* 1/4 C minced purple onion
Directions:
1. Heat oven to 350.
2. Cut potatoes in small cubes.
3. Mix together olive oil and spices and stir on to potatoes until all covered.
4. Bake for about 20 min. until all cooked. Add salt after baking them in the oven.
5. While the potatoes are cooking. Peel the avocados and mash them up. Add pepper, juice, and salt and pepper. Optional items chili powder and onion. Stir all together.
6. Serve potatoes hot with the guacamole. YUM!
I would have never thought to put roasted potatoes with guacamole. Sounds really delicious.
