Roasted Sweet Potatoes with Gucamole

We went through a scare with my Dad yesterday, thinking he had a stroke. It turned out not to be a stoke. They weren't really sure what caused the little episode he went through. One thing that did happen was it was another reminder of how fragile life is. It made me appreciate family more, and helped me  focus on the things that matter most. It is easy to get caught up in the day to day tasks of life. I know the day will come when my parents will pass on to the other side. I don't look forward to that day. :( I am grateful it was not time for that to happen yet. I am so very grateful for the parents I have, and owe them so much. Take time to appreciate your family that is around you.

It really adds to my enjoyment eating vegetables preparing them in different ways. I know my family feels the same way. Presentation is such a big part of serving food. I am always excited when I come up with a nice way to serve them. This recipe was a combination I had never tried before. I really liked it. I hope you do too.

3 to 4 sweet potatoes washed and scrubbed
3/4 tsp paprika
3/4 tsp curry powder
3 T olive oil
3 ripe avocados
1 jalapeno pepper diced in small pieces
juice of one lime
salt and pepper to taste
*1/4 tsp chili powder* optional
* 1/4 C minced purple onion

1. Heat oven to 350.
2. Cut potatoes in small cubes.
3. Mix together olive oil and spices and stir on to potatoes until all covered.
4. Bake for about 20 min. until all cooked. Add salt after baking them in the oven.
5. While the potatoes are cooking. Peel the avocados and mash them up. Add pepper, juice, and salt and pepper. Optional items chili powder and onion.  Stir all together.
6. Serve potatoes hot with the guacamole. YUM!

  1. I would have never thought to put roasted potatoes with guacamole. Sounds really delicious.
I am so grateful Gene is okay too. Glad you were there to give love and support.
We love you and your family too.

  2. Thanks Ellen. We were happy it was not more serious. We love you too. We need another visit. :)
