Egg Vegetable Pizza

Last night it sounded really good to have eggs and vegetables for dinner. This is what I came up with.  It was wonderful to have the vegetables keep their bright colors. We ate it all, with just the 3 of us. It is nice to eat so many vegetables in just one dish. I will be making this again soon. You can come up with your favorite mixture of vegetables, or what you have on hand. Have a great weekend. Loving this time of year. I left my windows open all day yesterday. :)  

Ingredients:
2-3 eggs beaten
1/2 milk (i used rice milk) 
1 tsp basil
1 tsp sea salt
1/2 tsp pepper
1/2 to 1 tsp garlic powder
1 handful of fresh spinach washed and chopped up
1 handful of cilantro washed and chopped
1 avocado chopped up
2-3 tomatoes washed and chopped
1 bunch green onions washed and chopped small pieces
1/4 to 1/3 C turkey bacon * optional
1/4 C mozzarella cheese* chopped in small pieces optional
*green chilies would be good too or jalapenos 
 
Directions: Grease 13x9  (I love using stoneware) Preheat to 350
1. Beat eggs, milk, spices, pepper and salt. Fold in the rest  of the ingredients with a wire whisk.You can sprinkle more bacon on top if desired. 

2. Pour into greased pan. Bake 25 to 30 min.

3. Serve while warm. Store leftovers in the fridge.

* We topped it with salsa.
