Whole Grain Granola Muffins

These muffins have some great ingredients in them. I love all the texture in them as well. I enjoy letting the muffins sit over night and the flavors are enhanced.  They do taste great right out of the oven too. Granola can be used for a lot of things. :) Can you feel Spring in the air?  Hello, to warmer weather. 

Ingredients:
1 1/2 C whole grain flour
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 C buttermilk or 1 C milk 1 T vinegar
1 egg
1/2 honey or brown sugar
1/3 coconut oil
1 tsp vanilla or almond extract
2 C granola
1/3 C unsweetened coconut
1/2 C dried fruit or fresh fruit * optional


Directions: Makes about 12 muffins
1. Preheat oven to 400. Grease muffin tins
2. In a bowl, pour in flour, soda, salt and cinnamon. In another bowl beat together the milk, egg, honey, oil and vanilla. Pour the wet ingredients into the dry and combine until just moistened. Don't over stir. Stir in the granola, coconut and  fruit if desired.
3. Scoop into greased muffin pans. Bake till light golden about 20 min. Less time if you do the mini muffins.
4. Remove from pan and let cool.
