Grilled Zucchini

We picked the first zucchini of the season. I don't like when zucchini gets cooked to long and becomes really soft. I thought it might be fun to grill it instead. It would keep some firmness to it, and yet still be soft. I would call it a success, when my daughter said she liked it, and she said she normally doesn't like it cooked. We all like it cooked in bread and muffins too. I will have to find other fun ways to use it. :)

Ingredients:
1 large zucchini washed and cut in long slices
1 tsp honey
1 tsp fresh lime juice
1/3 C olive oil
1 garlic clove minced
1 to 1 1/2 tsp salt
1/2 tsp fresh ground pepper

Directions:

1. Mix all the ingredients in a bowl. Let sit at least 15 min.

2. Heat up the grill.

3. Turn the grill down to low and place the zucchini on the grill. I put the lid down so the steam could help cook it. I cooked it till it was golden on each side. The time of cooking will depend on your grill. It took me about 10-12 min.

*Next time I will have fun adding some more spices. I think a littl chili powder would be good.
