Chicken with Vegetables and Qunioa

I decided to have some quinoa for dinner with our chicken. It was a nice way to incorporate grains into the meal. I actually enjoyed the quinoa and vegetables better than the chicken. It was a nice and easy healthy meal.

Ingredients: Serves 8

1 1/2 to 2 lb chicken tender
2 T olive oil
3 C quinoa cooked
4 garlic cloves pressed
2 T onion dried
1 T fresh marjoram * optional
1 T thyme
5 fresh basil leaves or 1 tsp dried basil
salt and pepper to taste
1 Bag of frozen mixed vegetables
1 C water

Directions:

1. Boil 3 C water and then added 1 1/2 C qunioa. Cook until it is softened. While it is cooking in another frying pan put olive oil. Heat the oil and add the garlic. Cook until light golden color. Then put in the chicken, onions spices, and cook until it is golden on the outside.

2. Add the cooked qunioa into the chicken . Pour in a cup of water and vegetables and put the lid on. Cook on med high heat. Stir a couple times. Cook until the vegetables are heated all the way through. Then serve. Enjoy! =)
