Chicken Won-ton Salad


This was a good dinner that we enjoyed. I love all the colors in it. Colors add a lot to the meal appeal. This was tasty as well. It would taste great with some yummy rolls too. It could also be served for lunch or brunch.

Ingredients:

3 T soy sauce
3 T water
2 tsp grated ginger root or 1 tsp ground ginger
4 boneless skinless chicken
5 C mixed salad greens (romaine. spinach, etc.. not iceberg)
2 zucchini grated
2 T green onion or 1/8 C purple onion chopped fine
1 C chopped red cabbage
10-15 won-ton wrappers cut into strips

dressing:
1/3 C unsweetened pineapple juice
1/4 C rice vinegar
1T soy sauce
2 T honey
1 1/2 tsp sesame oil or olive oil
1/4 t pepper

Directions:

1. Brush soy sauce and ginger on to the chicken. Put in hot frying pan, with 2 T olive oil or canola oil. Cook on both sides, until completely cooked all the way through. Brush with sauce when you turn them over. Cool slightly and then shred the chicken or cut into strips.

2. Heat a frying pan with a couple T of oil and then fry the won-ton strips until lightly browned. Drain on paper towel until all of the oil is off. You can break them into pieces.

3. Toss together in large bowl, salad greens, zucchini, onions, and cabbage.

4. Put in a jar pineapple juice, vinegar, soy sauce, honey, oil and pepper. Toss chicken in 1/4 C of the dressing. Toss the vegetables with remaining dressing. Lightly toss in won-tons and then toss in the chicken. *Optional you could sprinkle with sesame seeds. *You could add other vegetables like grated carrots or strips of cucumbers.
