Oatmeal Waffles

1 C. Oatmeal (Old fashioned)
1 3/4 C. Milk
1 1/3 C. Spelt and Wheat (or white flour)
1 T. baking powder
1 t. cinnamon
1/8 t. salt
2 T. Sucanat (or brown sugar)
2 T. Flax (ground) *optional (If you add flax, then also add 1/4 C. water)
2 eggs slightly beaten
2 T. Butter
3 T. Olive oil (canola oil, coconut oil)

Mix oatmeal and milk together in a bowl. Let soften for 5 or 10 minutes. Mix flour, baking powder, cinnamon, salt, Sucanat (or brown sugar), and flax. Mix dry ingredients together with oatmeal mixture. Add eggs, butter and oil. Stir until mixed. Don't over stir. Pour batter into preheated greased waffle iron. Pick your own topping.
