Qunioa with mushroom & Adzuki Beans


I saw the Adzuki Beans at the store, and decided to give them a try. We really liked them. They are similar to a black bean but smaller and more subtle. It was a nice surprise.

2 TBSP Olive Oil
1/2 C. Shredded Carrots
3 green onions chopped
1 small can of chopped mushrooms, drained
2 1/2 C. Chicken broth (Or you could use vegetable broth)
1 C quinoa washed and drained
2 C Cooked adzuki beans
Pepper and salted to taste
1/2 C of cooked shredded chicken (opt.but good)

Saute vegetables in olive oil for 3 min. Add broth, beans,chicken and Quinoa . Season to taste with salt and pepper. Bring to boil. Reduce heat to low and simmer for 15-20 min. or until all liquid is absorbed. Fluff with a fork . Serves 4-6. Enjoy a healthy meal. :)

  1. Adzuki beans are fantastic! I've only found them as "sweetened red bean paste" at Asian stores, where they're used as filling for steamed buns or Taiwanese ice desserts...it's even a Japanese ice cream flavor.

    I'd never thought about trying them in a savory dish, though. Sounds awesome!
