Honey Oat Muffins
I made mini muffins with this recipe this time. They were excellent and very moist. Even my picky grandson was a fan. Instead of using white flour, I added 1/2 c. of my spelt mixture (5 c. spelt, 2 c. kamut, 1 c. brown rice flour). All white flour or all whole wheat would probably work just as well, although they might not be as fluffy with all whole wheat.
1 C. wholeGrain flout
1/4 c. brown sugar
1 t. baking powder
1 1/2 c. rolled oats
1 t. salt
1/3 c. olive oil
1/4 c. honey
1 c. milk
1 egg, beaten
Preheat oven to 400 degrees. Combine dry ingredients. Make a well and add remaining ingredients inside. Stir until just moistened. Fill muffin cups and bake for 15-20 minutes. Makes 12 muffins.
