This was a nice quick dinner and they tasted great. They are healthy as well. It is fun to have Mahi Mahi different ways. It is a nice light tasting fish. I really like. It didn't take a lot of fish to make the tacos either. I loaded it up with lots of fruit and vegetables.
Ingredients:
1 Lb Mahi Mahi
2-3 Roma tomatoes cute up in chunks
1 mango cut in small pieces
1/8 purple onion chopped in small chunks
salt and pepper to taste
corn tortillas
little cheese Optional *
Taco sauce tasted good, salsa would taste good too. optional*
Directions;
1. Heat fish in skillet with 1 T olive oil . Heat on both sides a couple minutes till flakes apart with a fork. (No pink left)
2. Heat a small fry pan with a small amount of oil. Cook tortilla till slightly brown on both sides.
3. Fold Tortillas in half. Put fish and the vegetables and fruit of your choice. Pour a little taco sauce or salsa on top. Best if served warm. Enjoy a tasty healthy quick meal.
