This is a wonderful Fall breakfast . I love the added flavor of pumpkin with the french toast. You can make the syrup or caramel to go with the french toast or you can eat them plain or with jam. I thought they tasted really good just plain.
Pumpkin Pie French toast
2 eggs
1/2 C milk of your choice
1/2 C Pumpkin Pie filling *
Buttermilk syrup
3 T butter
1/2 C honey
1/2 C buttermilk *(1/2 C milk 2 tsp vinegar)
1/2 tsp baking soda
1/2 t vanilla
2 tsp almond extract * optional (but so good!)
In a saucepan, on med. low heat pour in butter, buttermilk, and honey. Let the mixture come to a boil for 2 min. Take off the heat stir in baking soda, vanilla, and almond extract. Serve over warm french toast.
Caramel Topping
1 C canned coconut milk (full fat)
5 T honey
2 T coconut oil
1 tsp vanilla
10 slices of whole grain bread
Directions
1. In a small sauce pan on medium heat. Pour in milk, honey, and oil.
2. I turned up my setting on my stove up to 6. I stayed stirring it the whole time. Not wanting it to burn. Keep stirring. It took mine about 15 min to thicken.
3. Take off the heat and stir in the vanilla. It will thicken as it cools. Enjoy a wonderful treat!
4. Store leftovers in the fridge in air tight container. When ready to eat warm up on stove or in microwave. It will harden in the fridge.
Directions makes about 10 french toast
1. Beat eggs, and then add milk, together beat together.
2. Then beat in the pumpkin. Dip bread into the mixture.
3. Heat up griddle. Spray with non stick oil or coconut oil. When hot put on french toast. You can sprinkle on cinnamon while cooking if desired.
* You can freeze leftover pumpkin pie filling in airtight container.

Whole Grain French Toast with Honey Buttermilk Syrup
My husband and I had a nice week in the sun to celebrate our 31 years of marriage. It felt really nice to put on summer clothes and be warm. I love the ocean and sun. It is weird to tell people that and they aren't even 31 years old yet. We are thrilled to be married and enjoy having fun together. My son was excited to have me come home and make him breakfast yesterday. That has always been one of the ways to my boy's heart.
I made him whole grain french toast. He gobbled it up. It is wonderful to start the day off right with a great breakfast. Always remember when you are buying whole grain bread to make sure it says whole at the beginning of the ingredients. If it doesn't chances are you aren't getting anything but white flour.
Ingredients
3 eggs
1/2 C almond milk
1/4 tsp nutmeg
1/2 tsp cinnamon
1/8 tsp cloves
1 tsp vanilla
8 slices of wholegrain bread
Syrup
3 T butter
1/2 C honey
1/2 C buttermilk *(1/2 C milk 2 tsp vinegar)
1/2 tsp baking soda
1/2 tsp vanilla
2 tsp almond extract * optional (but so good!)
Directions
1. Head up griddle to 350 degrees.
2. Beat eggs, and then add milk, spices, and vanilla.
3. Dip bread and drain off excess mixture on the side of the bowl.
4. Heat up griddle. Spray with non-stick oil. Place french toast on the griddle and cook on both sides
5. While the french toast is cooking, in a separate saucepan on medium low heat, pour in butter, buttermilk, and honey. Let the mixture come to a boil for 2 minutes. Take off the heat. Stir in baking soda, vanilla, and almond extract. Serve over french toast.

Yummy French Toast in a pan with Strawberry Syrup
This would make a great Christmas brunch. It would make a great meal anytime. I think it was the best french toast I have had. The strawberry syrup made the meal complete. :)
Ingredients: serves 6-8
french toast
12 slices of whole grain bread
8 eggs
1 3/4 C almond milk or milk
1 tsp vanilla (or almond flavoring would be yummy!)
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 C brown sugar or sugar of your choice
3 T ground pecans
3 T butter
syrup
2 1/2 C strawberries (frozen thawed)
1 tsp lemon juice
3 T honey
Directions: Heat oven to 350
1. Grease 9 X 13 pan.
2. Place bread slices in pan overlapping them.
3. Beat or blend in blender eggs, milk, vanilla, and, spices.
4. Pour over the bread. You can cover and put in fridge over night or just continue to prepare.
5. In a small bowl mix the sugar, nuts and butter. Sprinkle over the bread.
6. Bake in hot oven for about 40 min or until knife comes out clean.
7. For syrup place the strawberries, juice and honey into blender and blend until smooth.
8. Serve syrup with hot french toast. Enjoy!
* Cut up bananas, or top with berries, or both would be delicious too.
