Ginger Mahi Mahi Glazed



Oh, I can't get enough of this time of year. I have spent a lot of time being outside this week. It is so nice to have it warm again, and the blue sky, and sunshine are fantastic. Every morning I wake up and see blue sky it makes me want to sing. There is something peaceful about the summer morning they invigorate me. I enjoy getting up early to enjoy them. It is a great time of year.
This was also part of the Father's Day feast. I went all out. My husband is a sweetie, and always makes an amazing feast for Mother's Day, so I wanted to make a nice meal for him as well. This marinade could be used on any kind of fish. I think the marinade adds to the fish experience. It also helps to have my family more interested in eating it, and that is a good thing too. :)

Ingredients:
1/4 C honey
4 T balsamic vinegar or plain vinegar
1/4 C soy sauce
1 T grated ginger or 2 tsp dried ginger
3 cloves of minced garlic
1 T olive oil
4-6 6 oz Mahi Mahi fillets

Directions:
1. In a bowl or blender blend up the marinade.

2. I then put the fish in a large zip lock, and poured the marinade on top.

3. I started it 24 hours ahead of time. I shook up the bag a couple times during the 24 hour period.

4. Heat up a barbecue or skillet (put in a little oil to help it not to stick) Bake 5-7 min on each side.
5. You could heat up the remaining marinade in a saucepan, and add 1 T Of thickener (cornstarch or Ultra gel) and serve it over the fish or rice.

Orange Lime Mahi Mahi

This is another way to cook your fish. I used Mahi Mahi but I would think this would work great with any white fish. I served it with brown rice and a mixed frozen vegetable. I liked it better than the chicken the night before.

Ingredients:

1 1/2 to 2 lbs Mahi Mahi or another white fish
4 T lime juice
1 orange
salt and pepper to taste

Directions:

1. Put the fish in a 13x9 greased Pyrex dish. Pour the lime juice on top of the skinless side. I then cut an orange in 1/2 and put the slices on top of the fish. Salt and pepper. Cover with foil.

2. Bake at 375. My fish was frozen so it took about 45 min. You will have to check it and see how long it takes. I could smell when it was done. I took it out of the oven and squeezed the remaining other half of the orange on top of the fish. I served it with Brown rice and green frozen vegetable mix. It was a tasty meal.

Mahi Mahi Tacos

This was a nice quick dinner and they tasted great. They are healthy as well. It is fun to have Mahi Mahi different ways. It is a nice light tasting fish. I really like. It didn't take a lot of fish to make the tacos either. I loaded it up with lots of fruit and vegetables.

Ingredients:

1 Lb Mahi Mahi
2-3 Roma tomatoes cute up in chunks
1 mango cut in small pieces
1/8 purple onion chopped in small chunks
salt and pepper to taste
corn tortillas
little cheese Optional *
Taco sauce tasted good, salsa would taste good too. optional*

Directions;

1. Heat fish in skillet with 1 T olive oil . Heat on both sides a couple minutes till flakes apart with a fork. (No pink left)

2. Heat a small fry pan with a small amount of oil. Cook tortilla till slightly brown on both sides.

3. Fold Tortillas in half. Put fish and the vegetables and fruit of your choice. Pour a little taco sauce or salsa on top. Best if served warm. Enjoy a tasty healthy quick meal.

Sweet and Sour Mahi Mahi

I hadn't ever made Mahi Mahi, but it was on sale so I decided to give it a try. We enjoyed it. It is a nice light tasting fish.

Ingredients:


3 T Honey
3 T Soy sauce
2 T Grated fresh ginger root
2 Garlic clove crushed
2 T Olive oil
1 T Molasses
4 (6 ounce) Mahi Mahi fillets
Salt and pepper to taste
2 T Coconut Oil or Oil of your choice

Directions

1. Mix together honey, soy sauce, ginger, garlic, olive oil, and molasses in a bowl.

2. Pour 1/2 the marinade in a 13 x 9 glass baking dish. Put the fish in skin side facing up. Pour the remaining marinade on top. Making sure it all gets covered. Let sit for 20 min.

3. Heat up skillet. Put the coconut oil in the pan. Put the fish in the pan skin side up. Turn over and cook a few more minutes till it flakes apart with a fork.

4. I took the fish out and poured the marinade in the pan and cooked for a few minutes. Then you can use it for on top of the fish or rice if you have that.

Menu:
Mahi Mahi
Guacamole—couple Avocados mashed 2 T dried Onions, 1/2 t chili powder, 1 T Lime Juice
Cut up celery, carrots, cucumbers
Baked sweet potatoes- I sprinkled cinnamon on mine with salt and pepper. Yummy!
