Pesto with Shrimp and Pasta


This was a fast easy meal that tasted great.
I ended up mixing some spinach in with mine and made it into more of a salad. Either way works. It was a fun combination that I had not made before.

Ingredients:
1 lb package of pasta (Your choice)
1 lb shelled and diveined shrimp, cooked
1 T oil
3/4 C pesto
3-4 garlic cloves minced
1 15 oz can chick peas drained and rinsed *optional
4 Roma tomatoes chopped in small pieces
sea salt and fresh ground pepper to taste
*fresh spinach optional


Directions:

1. In a large pot cook pasta according to package directions. You can add 1 T of oil to the water so it won't boil over while cooking. In the last couple minutes of cooking add the shrimp in with the pasta. Let it cook together for 3-5 min.

2. Drain the shrimp and pasta. Add pesto, garlic, chick peas, tomatoes. Stir all together. Then add salt and pepper to taste. Serve! If you want you can stir in some fresh spinach.
