Whole Grain Carrot and Orange and Spice Muffins
I love lot of different muffins, especially when they are healthy. :) I got inspired about trying some carrot muffins, after reading this blog. She has some yummy ideas. These are a tasty treat, and healthier than carrot cake. I was pleased how light they were with whole grains in them. :)
Ingredients: Made 35 mini muffins
3 C whole grain flour*
4 tsp. baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
1 tsp fresh grated ginger or ground
1/2 C coconut oil
1/3 C honey
2/3 C milk
4 T orange juice unsweetened
2 eggs
2 tsp vanilla
2 tsp orange zest
1/2 unsweetened shredded coconut * optional
2 C grated carrots
Directions: Heat oven to 375
1. In a medium bowl combine flour, baking powder, baking soda,cinnamon, and ginger.
2. In a separate bowl cream the oil, honey, and eggs. Then add the milk, juice, zest, and vanilla. Stir in carrots. Stir dry ingredients into wet mixture. Don't over stir.
3. Scoop into greased muffin pan. Place pan in preheated oven. Bake 10 to 12 minutes, or till golden. Cooking time will depend on muffin size.
* (I ground up 3 C spelt, 2 C kamut, 1 C buckwheat, 1 C brown rice, 1 C oat groats. I had extra left over to use in other cooking.)
