Healthy light waffles

I like to try out new versions of waffles. I REALLY liked these. They were so light and tasty and they only had whole grains. Gluten free for those who might be interested. They were a hit with the family. :) Even with my daughter who doesn't like breakfast foods. She came back for more. My son said they were the best waffles I had ever made. :) WOW!

1 1/2 C * Spelt flour mix or Wheat flour
1/2 C Cornstarch
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 1/2 C buttermilk or milk plus 1 1/2 T vinegar let sit for 5 to 10 min
1/4 C Coconut milk or plain milk (Helps to make it not as thick)
3/4 C Canola Oil or Oil of your choice *
2 eggs separated
2 Tbsp sugar
1 tsp vanilla

1. Measure all the dry ingredients and put in a bowl. The first 5 on the list.

2. Mix the buttermilk, milk, oil and egg yolks. set aside.

3. In another bowl, beat the egg whites until soft peaks add the sugar and continue to beat till the peaks are firm and glossy. Then beat in vanilla.

4. Pour the milk mixture into dry mixture. Stir until moistened.

5. Fold in the egg whites gently till completely mixed.

6. Pour batter into hot iron. Don't check on them till the light tells you they are done.

7. Serve them hot. :) With your favorite topping.

*Sorry it is not a great picture. :(
* Spelt mix this time was ground earlier for another recipe as well. 5 cups spelt 2 C. Kamut 1 C Brown Rice. The flour made some yummy pizza too.
* I would like to try it with coconut oil or maybe a little less next time.
