Chewy Cinnamon Cookies

3 3/4. + 4 T. spelt flour mixture (5 c. spelt, 2 c. kamut, 1 c. brown rice flour) White flour will also work.
1 1/4 t. baking soda
1 1/2 t. baking powder
1 t. kosher salt
1/2 c. coconut oil (or unsalted butter, room temperature)
1/2 c. olive oil (or unsalted butter, room temperature)
1/2 c. xagave (or 3/4 c. white sugar)
1 3/4 c. organic sucanat (or brown sugar)
1 1/2 t. cinnamon
2 eggs
1 t. vanilla extract
granulated sugar
cinnamon

Preheat oven to 350 degrees.

Mix together flour, salt, baking soda, and baking powder, then add coconut oil, olive oil, xagave, and sucanat. (If you are using butter and normal sugar, you will want to cream the butter and sugars before adding the dry ingredients, just as you would with normal cookies.)

Mix cinnamon with sugar for topping. About 1 t. cinnamon for every 1/4 c. sugar works well.

Roll cookies into 1" balls. Place cookies on a parchment paper or silpat and bake for 18 to 19 minutes until golden brown. Cool 5-10 minutes on sheet, then cool completely on wire rack.
