I discovered a new variety of wheat recently. Einkorn. It's an ancient ancestor of the wheat that is commonly grown today. So    farmers who were living off the land gradually began to favor other varieties of wheat. Because of that, Einkorn was largely ignored as wheat became hybridized and modified. The farmers who ignored it actually blessed us, because they have given us a purer, healthier wheat to eat now.
