Barley Qunioa Pilaf



This was yummy. Really, really yummy. For Recipe Redux we were challeneged to take a vintage recipe and change it into something newer and healthier. Did you see all the delicious veggies in this? Instead of a basic pilaf, with nutrient-empty white rice, we now have whole grains, veggies, and it's really good. This would look great on a Thanksgiving table if you're looking for something a little different!

Ingredients:
1/2 white onion chopped fine
3/4 C chopped leek or green onion
1/2 C grapeseed oil or  olive oil
1 C barley
1/2 C quinoa
2 tsp chicken sesaoning
2 3/4 C water (You could use chicken broth)
1 to 1 1/4 C shredded carrots
14 oz can of sliced mushrooms or 1 1/2 C fresh mushrooms 
1/4 C green onion chopped for garnish
salt and pepper to taste
*Optional you could garnish with pine nuts too.

Directions:
1. In a skillet heat oil and stir in the onions. Cook until soft on medium heat. Should take about 5 min.
2. Stir in the barley and qunioa and cook together another 5 min.
3. Pour into a covered dish and stir in chicken seasoning 1 1/2 C water, carrots, mushrooms ( poured the water in from the can too). Bake for 30 min on 350.
4. Take out of oven and pour and sitr in the remaining 1 1/4 C water. Cover and cook another 30 min.
5. Take out of the oven and garnish with green onions. (pine nuts if desired) Enjoy!
