Nectarine Berry Crumble

I had a lot of fun with this. I had a large amount of nectarines. That needed to be used, I was in the mood to do some fall baking, and so I came up with this. I love the color and flavor combination. I had never used nectarines in a dessert they were tasty. It would taste great with whip cream, ice cream, or almond milk. I tried the almond milk on it. I did try a bite with ice cream too. Both were very tasty. :) This could be eaten at breakfast, or for a snack. 

Ingredients:
7 C nectarines peeled and chopped into bite size pieces
3 T fresh orange juice or juice from one orange (I even added some pulp)
3 T kamut flour or whole grain flour
3 T honey
1 1/2 C blackberries or boysenberries
1/2 whole grain flour
3/4 C coconut oil
2 C old fashioned oatmeal
1/2 C brown sugar or other sweetener (Add more if you want it sweeter) 
1/2 tsp nutmeg
1 tsp cinnamon
1/2 tsp baking powder 
Topping: Ice cream, whip cream, or almond milk or?  

Directions: Preheat oven to 350
1. In a  bowl mix together the nectarines, juice, flour and honey.
2. Fold in the berries and pour into a greased 9x13.
3. In another bowl. Mix together with a pastry blender or 2 forks, flour, oil, brown sugar, oatmeal, nutmeg, cinnamon, and baking powder. It should be a crumbly mixture when you are all done.
4. Spread over the top of the fruit.
5. Bake for about 20-30 min till the fruit is tender. Enjoy with your favorite topping.

  1. We have been making these all summer long, and they are delicious! I've never put baking powder in, though. I'd like to try it with coconut oil.

    Also, I love the dappled light and the fruit in the background (although it looks like an apple, not a nectarine ;)

  2. I hadn't put baking powder in before either. Thanks for your comments. I always appreciate the extra thought you put into them. I really liked this picture too. The light turned out really cool. I love catching light in the picture. It really is a nectarine. :) You are right though it does look like and apple.
