Pina Colada Smoothie


We have had some fun vacations that have included some virgin pina coladas. I have loved sitting by the pool while I enjoy it. I thought it would be fun to make some at home. It is a great way to feel like you are on vacation even without going anywhere. I tried two different versions. One with pineapple and coconut, and the second one I used strawberries. I didn't add a lot of sweetener—I like to get the natural fruit flavor more. If you want it sweeter you can add some extra. I always get sad having summer vacation come to an end. I love the summer and all the fun that comes with it.

Ingredients:
1 C  ice cubes
1/2 C unsweetened pineapple juice (chilled would be great!)
1 C frozen pineapple chunks
1 C canned coconut milk (Chilled would be great) 
1 tsp of honey  (more if you prefer)
1/2 C frozen strawberries or 1/2 a frozen banana ? Optional

Directions:
1. Pour all the ingredients into the blender and blend a couple minutes until nice and smooth. 
2. Serve immediately when its nice and slushy! Yum!

  3. I always seem to have a random half can of coconut milk hanging around after another recipe, and your recipe sounds like a tasty use for it!
