If an apple a day helps keep the doctor away, what about a piece of apple cake? :) This would make a wonderful dessert for your Halloween party. I love the fresh apples in it. As I was making it, it made me appreciate this fun time of year. The caramel topping is a treat as well. You could use the caramel topping on other things as well. It tastes like homemade caramel. I made a regular apple cake a little healthier. It was good to the last bite. You could eat it without the topping as well, to save calories. :)
Ingredients:
Cake:
1 C honey
1/2 C coconut oil or oil of your choice
2 eggs
2 tsp baking soda
2 tsp cinnamon
1/2 tsp fresh nutmeg or 1 tsp dried nutmeg
1/3 tsp sea salt
2 C Kamut flour or whole grain flour
3 C of grated Fuji apples or apple type of your choice
1/2 C finely chopped walnuts
Carmel Topping:
1 T butter
1/4 to 1/3 C honey
2/3 C cream
1 1/2 tsp vanilla
Directions: preheat oven to 350
1. In mixing bowl beat honey, and oil together. Then beat in eggs one at a time.
2. In another bowl measure and whisk together all dry ingredients. Then stir into wet mixture. Fold in apples and nuts. Stir just until mixed.
3. Grease a 13x9 pan. (The stoneware cooks whole grains so nice)
4. Spread batter into a pan. Bake for 30 to 40 min.
5. While the cake is baking, pour all the ingredients for the topping, into a small saucepan. Put on stove on medium heat and stir continually. Cook until desired thickness. It will thicken as it cooks. Enjoy!
